Garlic Parmesan Smashed Potatoes

Ingredientes

  • 4 clv garlic, halved
  • 1 Tbsp. extra virgin olive oil
  • 2 1/2 lb red potatoes, quartered
  • 1/4 c. butter, cut into pcs
  • 3/4 c. freshly grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 c. warm lowfat milk

Direcciones

  1. Saute/fry garlic cloves in warm oil in a large saucepan over medium heat till golden brown.
  2. Add in potatoes and water to cover. Bring to a boil; cover, reduce heat, and simmer 15 min or possibly till potato is tender. Drain, discarding garlic. Add in butter and next 3 ingredients to potatoes.
  3. Beat at medium speed of an electric mixer till fluffy, gradually adding
  4. lowfat milk. (Don't overbeat.) Add in additional lowfat milk, if you like, for creamier
  5. potatoes.
  6. Makes 4 to 6 servings.
