%20There%20are%20over%20fifteen%20dishes%20that%20are%20specific%20to%20the%20season.%20The%20British%20left%20their%20sponge%20and%20fruit%20cakes,%20the%20Spanish%20left%20their%20pastelles%20(similar%20to%20arepas),%20the%20Africans%20introduced%20their%20paime%20(a%20sweetened%20disk%20of%20cornmeal,%20raisins,%20and%20coconut%20steamed%20in%20banana%20leaves),%20the%20Portuguese%20their%20garlic%20pork,%20just%20to%20name%20some%20of%20the%20more%20popular%20ones.%3C/p%3E%3Cp%3ETrinidadians%20take%20the%20holiday%20season%20very%20seriously.%20We%20even%20have%20our%20own%20version%20of%20holiday%20music.%20Like%20celebrating%20christmas%20itself,%20this%20music%20originated%20with%20the%20Spanish.%20Called%20parang,%20it%20began%20as%20Spanish%20versions%20of%20carols.%20Today,%20parang%20music%20has%20diverged%20into%20soca%20parang%20and%20chutney%20parang,%20the%20former%20referring%20to%20holiday%20music%20with%20a%20soca%20/calypso%20rhythm%20and%20while%20the%20latter%20is%20the%20same%20only%20with%20an%20Indian%20rhythm.%20My%20paternal%20grandfather%20was%20a%20traditional%20parandero%20(parang%20singer.)%20And%20he%20was%20good%20too,%20having%20been%20part%20of%20a%20parang%20group%20during%20his%20time%20-%20the%20sixties%20and%20seventies.%20When%20I%20was%20growing%20up%20in%20rural%20Trinidad,%20these%20groups%20would%20go%20from%20house%20to%20house%20in%20the%20neighborhood%20in%20the%20same%20way%20carolers%20do%20here%20in%20the%20United%20States.%20The%20only%20difference%20was%20that%20they%20were%20invited%20in%20for%20food.%3C/p%3E%3Cp%3ELike%20everywhere%20else%20in%20the%20world,%20it%20is%20a%20time%20for%20family%20and%20freinds.%20But%20unlike%20other%20places,%20it%20is%20taken%20to%20an%20extreme.%20Family%20can%20show%20up%20for%20days%20after%20December%2025th,%20all%20the%20way%20into%20the%20first%20and%20second%20weeks%20of%20the%20new%20year,%20sometimes%20unannounced.%20So%20it%20is%20very%20important%20to%20have%20food%20ready.%20And%20lots%20of%20it.%20Of%20the%20foods%20mentioned%20above,%20fruit%20cakes%20and%20garlic%20pork%20can%20be%20made%20in%20advance,%20so%20many%20home%20cooks%20start%20preparations%20weeks,%20even%20months,%20before.%20But%20spoilage%20is%20not%20a%20serious%20issue:%20our%20fruit%20cakes%20are%20soaked%20in%20so%20much%20alcohol%20that%20not%20even%20the%20hardiest%20bacteria%20could%20survive.%20And%20garlic%20pork,%20once%20properly%20sealed%20in%20airtight%20containers,%20can%20be%20refrigerated%20for%20up%20to%20two%20weeks.%20(I%20usually%20don't%20go%20past%20four%20days,%20however.)%3C/p%3E%3Cp%3EWhile%20Christmas%20is%20over%20with%20in%20the%20US,%20the%20Trinidadian%20girl%20in%20me%20still%20feels%20like%20celebrating...with%20food.%20Here%20is%20my%20version%20of%20garlic%20pork.%3C/p%3E%3Cp%3EGarlic%20Pork%3C/p%3E%3Cp%3EServes%204%20to%206%3C/p%3E%3Cp%3E1.%20Combine%20all%20of%20the%20ingredients%20and%20place%20in%20an%20airtight%20container%20in%20the%20refrigerator%20for%20at%20least%20two%20days.%20Maximum%20four%20days.%3C/p%3E%3Cp%3E2.%20When%20ready%20to%20cook,%20remove%20the%20meat%20from%20the%20marinade.%20Add%20to%20a%20large%20stock%20pot%20with%20just%20enough%20water%20to%20cover,%20and%20boil%20until%20the%20meat%20is%20cooked%20through%20about%2010%20minutes.%20Drain.%3C/p%3E%3Cp%3E3.%20Add%20a%20couple%20tablespoons%20of%20vegetable%20oil%20to%20a%20hot%20skillet%20and%20cook%20the%20pork%20in%20batches%20until%20golden%20brown%20on%20all%20sides.%20*%20Sprinkle%20with%20cilantro%20and%20serve%20warm%20with%20chutney%20or%20in%20whole%20wheat%20rolls.%3C/p%3E%3Cp%3E*Alternatively,%20the%20boiled%20pork%20can%20be%20cooked%20in%20the%20oven%20at%20400%20degrees%20F,%20for%20fifteen%20to%20twenty%20minutes%20until%20browned.%20(I%20prefer%20the%20skillet%20version,%20though.)%3C/p%3E){kind=link}
