Ingredientes

  • 1/2 c. onion, cut up
  • 3 tomatoes, halved
  • 2 cucumbers, halved
  • 2 c. celery slices
  • 1/2 green pepper
  • 6 c. tomato juice
  • 3 T extra virgin olive oil
  • 3 T lemon juice
  • 2 teaspoon salt
  • 1/4 teaspoon pepper

Direcciones

  1. To electric blender container add in vegetables and 1 c. tomato juice, blend till smooth. Transfer mix to large bowl and add in remaining ingredients. Chill several hrs or possibly till well chilled. Serve with additional finely minced onions, tomatoes, celery, green pepper and cucumbers to be added by the diner. About 8 servings.
