Ingredientes

  • 1 pkt farfalle (bow-tie) pasta - (16 ounce)
  • 2 lrg tomatoes seeded, and coarsely minced
  • 1 lrg cucumber coarsely minced
  • 1 sm red bell pepper coarsely minced
  • 1 sm yellow bell pepper coarsely minced
  • 8 med green onions sliced
  • 1 x green Anaheim chili seeded, minced
  • 1 can sliced ripe olives - (2 1/4 ounce) liquid removed
  • 1/2 c. finely-minced fresh cilantro
  • 1/2 c. tomato juice
  • 1/4 c. olive or possibly vegetable oil
  • 1/4 c. lime juice
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 2 x garlic cloves finely minced

Direcciones

  1. Cook pasta as directed on package; drain. Rinse with cool water; drain.
  2. Make Lime Vinaigrette: Mix all ingredients.
  3. Mix pasta and remaining ingredients in large bowl. Pour vinaigrette over salad; toss.
  4. This recipe yields 14 servings.
