Ingredientes

  • 300 gm red mullet fillets juice 1 lemon
  • 250 x water
  • 150 gm canned octopus
  • 100 gm frzn scampi thawed
  • 2 x onions thinly sliced
  • 1 sm pickled cucumber thinly sliced
  • 2 x tomatoes skinned seeded and quartered
  • 100 gm canned french beans dressing
  • 80 ml extra virgin olive oil
  • 2 Tbsp. wine vinegar
  • 1 tsp prepared mustard
  • 1 x salt pepper

Direcciones

  1. Poach the red mullet fillets in the lemon juice and water for 10 min.
  2. Drain and flake.
  3. Cut the octopus into bite sized pcs.
  4. Put the mullet octopus and scampi in a bowl.
  5. Add in the onions pickled cucumber tomatoes and French beans and mix carefully.
  6. Mix the dressing ingredients together and pour over the salad.
  7. Allow to stand for 20 min before serving to allow the flavours to mingle.
