- Poach the red mullet fillets in the lemon juice and water for 10 min.
- Drain and flake.
- Cut the octopus into bite sized pcs.
- Put the mullet octopus and scampi in a bowl.
- Add in the onions pickled cucumber tomatoes and French beans and mix carefully.
- Mix the dressing ingredients together and pour over the salad.
- Allow to stand for 20 min before serving to allow the flavours to mingle.
