Ingredientes

  • 6 x Strips bacon, diced
  • 3 lrg Potatoes, peeled,cooked,cubed
  • 1 sm Green pepper, diced
  • 2 Tbsp. Onion, finely minced Salt and pepper, to taste
  • 1/2 c. Sharp cheddar cheese, shredded
  • 6 lrg Large eggs
  • 1/4 c. Lowfat milk

Direcciones

  1. In a skillet over low heat, cook bacon till crisp; remove to paper towel.
  2. Reserve 2 tbs. drippings; add in potatoes, green pepper, onion, salt and pepper. Cook and stir over medium heat for 6-8 min or possibly till the potatoes are golden. Stir in cheese and bacon; remove mix to a bowl and set aside. Beat Large eggs and lowfat milk; pour into the same skillet. Cook and stir gently over medium heat till Large eggs are completely set, about 3-5 min. Add in the potato mix and stir gently till heated through.
