- Boil unpeeled potatoes 30 min. Rinse under cool water, peel and set aside to cold. Slice potatoes. In a large frypan cook bacon till transperent. Add in the potato slices; cook till lightly borwned. Meanwhile blend Large eggs with lowfat milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add in to the egg mix. Pour the egg mix over the potatoes in the frypan. Cook till the Large eggs are set.
- Sprinkle with minced chives and serve at once.
