German Hot Potato Salad

Ingredientes

  • 2 lb potatoes, peeled
  • 3 x to 4 slices bacon
  • 3 Tbsp. chopped onion
  • 1/4 c. sugar
  • 1/4 c. vinegar
  • 2/3 c. water
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp. cornstarch
  • 1 Tbsp. finely minced parsley

Direcciones

  1. In covered saucepan, cook potatoes in boiling water 15 to 20 min or possibly just till tender. Drain well. Cold slightly, then slice and place in large bowl.
  2. Meanwhile, in large skillet, cook bacon till crisp. Drain, reserving 2 Tbsp. bacon drippings. Return drippings to skillet. Add in onion and brown in drippings, about 3 min. Add in sugar,vinegar, 1/3 c. water, salt and pepper. In small bowl, dissolve cornstarch in remaining 1/3 c. water. Add in to onion mix and cook, stirring, till clear, thickened and bubbly, about 3 min. Cook and stir 2 min more. Pour warm mix over sliced cooked potatoes. Add in crumbled bacon and, if needed, more salt and pepper to taste. Garnish with minced parsley.
