.%3C/p%3E%3Cp%3EYou%20can%20imagine%20the%20look%20on%20his%20face!%20I%20had%20to%20quickly%20explain%20that%20choosing%20the%20book%20had%20nothing%20to%20do%20with%20me%20wanting%20kids%20%E2%80%93%20and%20no%20I%20certainly%20am%20not%20feeling%20broody%20(honestly%20children%20are%20so%20not%20on%20the%20radar%20at%20the%20moment,%20I%E2%80%99m%20struggling%20to%20look%20after%20all%20my%20plants,%20I%20couldn%E2%80%99t%20contemplate%20looking%20after%20a%20human%20being).%3C/p%3E%3Cp%3EIt%E2%80%99s%20just%20the%20book,%20written%20by%20Annabel%20Karmel%20%E2%80%93%20who%20I%20hear%20is%20a%20big%20noise%20in%20the%20children%E2%80%99s%20food%20industry%20%E2%80%93%20had%20lots%20of%20appetising%20meals%20in,%20particularly%20for%20lunches%20and%20snacks%20which%20I%20usually%20lack%20inspiration%20for.%3C/p%3E%3Cp%3EThe%20initial%20shock%20has%20passed%20and%20the%20other%20night%20he%20enjoyed%20a%20delicious%20meal%20made%20to%20one%20of%20the%20book%E2%80%99s%20recipes.%20This%20was%20giant%20pasta%20shells%20filled%20with%20a%20lovely%20cheesy,%20ricotta%20and%20spinach%20filling%20and%20covered%20in%20a%20rich%20tomato%20sauce.%20It%E2%80%99s%20then%20baked%20so%20it%20is%20cross%20between%20and%20lasagne%20and%20cannelloni.%20It%20was%20really%20delicious%20and%20was%20a%20nice%20change%20from%20your%20typical%20pasta%20dinner.%20I%20think%20although%20it%20is%20quite%20a%20homely%20dish%20it%20would%20work%20equally%20well%20as%20an%20informal%20dinner%20party%20dish%20because%20the%20shells%20make%20it%20look%20that%20little%20but%20more%20classy.%3C/p%3E%3Cp%3EGiant%20pasta%20shells%20with%20spinach%20and%20ricotta%3C/p%3E%3Cp%3ECan%20I%20just%20add%20%E2%80%93%20and%20I%20really%20don%E2%80%99t%20like%20to%20encourage%20people%20to%20shop%20at%20supermarkets%20but%20%E2%80%93%20you%20might%20think%20these%20large%20pasta%20shells%20are%20hard%20to%20come%20by.%20I%20first%20searched%20a%20couple%20of%20delis%20to%20see%20if%20they%20had%20them%20but%20no%20luck.%20However%20while%20popping%20into%20my%20local%20Tesco%20I%20found%20they%20had%20them%20in%20their%20Finest%20range%20for%20about%20%C2%A31.50%20for%20a%20large%20bag,%20so%20I%E2%80%99m%20sure%20you%E2%80%99ll%20be%20able%20to%20find%20some.%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3E1.Cook%20the%20pasta%20in%20boiling%20water%20for%2012-15%20minutes.%20Drain%20and%20run%20under%20a%20cold%20tap%20then%20toss%20in%20some%20oil%20to%20stop%20them%20sticking%20together.%3C/p%3E%3Cp%3E2.For%20the%20sauce%20fry%20the%20onion%20gently%20in%20olive%20oil%20until%20soft%20then%20add%20the%20garlic%20and%20cook%20for%20a%20further%20minute%20or%20two.%20Add%20the%20passata,%20tomato%20puree,%20sugar%20and%20season%20and%20simmer%20for%205-10%20minutes.%20Set%20to%20one%20side.%3C/p%3E%3Cp%3EThe%20giant%20pasta%20shells%3C/p%3E%3Cp%3E3.For%20the%20stuffing%20mix%20the%20ricotta%20with%20the%20spinach%20and%202/3%20of%20the%20mozzarella,%204tbsp%20of%20the%20parmesan%20and%20the%20nutmeg%20and%20season.%3C/p%3E%3Cp%3E4.Put%20a%20fine%20layer%20of%20sauce%20on%20the%20bottom%20of%20a%20lasagne%20dish%20or%20round%20ceramic%20dish.%20Stuff%20each%20shell%20with%20about%201tsp%20of%20filling%20and%20put%20them%20face%20up%20on%20top%20of%20the%20sauce.%20Pour%20the%20rest%20of%20the%20sauce%20around%20and%20on%20top%20of%20the%20shells.%20Scatter%20with%20the%20remaining%20mozzarella%20and%20parmesan%20and%20bake%20at%20200%20degrees%20for%2020%20%E2%80%93%2025%20minutes%20until%20golden%20and%20bubbling.%3C/p%3E%3Cp%3EDelicious%20baked%20giant%20pasta%20shells%20and%20salad%3C/p%3E){kind=link}
