Giant Reese's Pieces Peanut Butter Cookie
Back when I was in school and had clinicals early in the morning, I would always stop at Dunkin Donuts on my way to the hospital. You'd think I would go there to pick up some coffee to keep me alert for at least half of my 11-hour shift. But no, I went there for the cookies. Or the cookie, to be precise.
One giant freshly baked, warm, gooey, chocolate chip cookie. That's what I got. Every single clinical day. It was my routine and even the employees started catching on. And if I was ever running late and couldn't get one in the morning, I'd always make it a point to get one on my lunch break.
When I say I have a humongous sweet tooth, I'm really not exaggerating. I also have bad breakfast habits, but that's a discussion in it's own.
My point in all of this is that I was feeling quite nostalgic this week. Reviewing my old ultrasound notes and happening upon an ultrasound photo of a fetus on Tumblr brought back all the wonderful memories I had in school with my classmates, instructors, and patients. And of course, with the giant cookies.
So, to comfort myself and to honor my old time tradition, I made my own giant cookie, compliments of Picky Palate's genius recipe. It wasn't my usual chocolate chip cookie, but I did throw in some mini chocolate chips to complement the peanut butter. Everyone knows those two are meant to be together.
In exactly 18 minutes, I baked up the biggest, fattest, chewiest, and gooiest Reese's Pieces peanut butter cookie ever. It was perfect. I wish I could say that I didn't have to share it and that it was all mine, but I have a younger brother that is always hungry, particularly for my baked goods. Speaking of which, he's recently suggested to me that peanut butter and Oreos would be a good combination. I think I sense a cookie idea coming along. Stay tuned :)

Giant Reese's Pieces Peanut Butter Cookie
Yield: One giant cookie or 4 regular sized cookies
Ingredients:
- 2 tablespoons unsalted butter, softened
- 2 tablespoons granulated sugar
- 2 tablespoons packed light brown sugar
- 2 tablespoons beaten egg
- pinch of vanilla powder (or 1/2 teaspoon vanilla extract)
- 2 tablespoons creamy peanut butter
- 1/2 cup all purpose flour
- 1/4 teaspoon baking soda
- pinch of salt
- 1/4 cup Reese's Pieces, plus a few more for sprinkling
- 2 tablespoons mini chocolate chips
Directions:
Preheat oven to 350 degrees F. Line a small baking sheet with parchment paper.
In a large mixing bowl, whisk together butter and sugars until light and fluffy. Add egg and vanilla, and mix until well combined. Stir in peanut butter; then add flour, baking soda, and salt and stir until just incorporated. Fold in Reese's pieces and chocolate chips.
Scoop the ball of dough onto prepared baking sheet. Top with a few extra Reese's pieces. Bake for 17-19 minutes, or until edges are light golden brown. Let cool on baking sheet for 10 minutes, then dig in!
