%3C/p%3E%3Cp%3EOkay,%20back%20to%20this%20challenge.%20The%20Quickie%20Cocktail%20Challenge%20is%20a%20joint%20challenge%20between%20a%20talented%20sweet%20Denise%20Fletcher%20at%20Quickie%20on%20a%20dinner%20table%20and%20the%20smart%20supportive%20Lazaro%20at%20Lazaro%20Cooks.%20I'm%20glad%20they%20are%20open%20to%20non-alcoholic%20drinks!%20I'm%20a%20light%20weight%20and%20wouldn't%20be%20too%20convincing%20to%20create%20an%20alcoholic%20drink.%20It's%20like%20a%20monkey%20teaching%20fish%20to%20swim.%20The%20prize%20is%20a%20copy%20of%20Denise's%20Cookbook%20-%20Quickie:%20Morning,%20Noon,%20and%20Night.%20It%20contains%20awesome%20recipes%20for%20any%20time%20of%20day!%3C/p%3E%3Cp%3EI%20went%20to%20a%20farmers%20market%20and%20got%20fresh%20raspberries%20and%20was%20thinking%20of%20what%20to%20do%20with%20them.%20I%20also%20had%20rose%20water%20left%20in%20pantry%20from%20my%20rose%20water%20infused%20creme%20brulee;%20the%20guest%20post%20for%20Lazaro.%20I%20wasn't%20sure%20how%20to%20put%20it%20together%20until%20I%20recalled%20one%20of%20the%20posts%20from%20Silvia%20at%20Citron%20et%20vanilla%20in%20which%20she%20infused%20berry%20and%20lychee.%20So,%20I%20added%20lychee%20as%20one%20of%20the%20ingredients.%20Lychee%20also%20goes%20well%20with%20rose%20water%20so%20it%20is%20a%20perfect%20candidate!%20Now,%20comes%20to%20the%20%22stunt%20man%22%20for%20alcohol.%20I%20could%20use%20sparkling%20water,%20club%20soda%20and%20such%20but%20I%20needed%20something%20a%20little%20sweeter.%20Ginger%20Ale%20came%20to%20mind.%20Here%20we%20go,%20the%203%20amigos%20in%20one%20glass.%3C/p%3E%3Cp%3EI%20hope%20it's%20sexy%20enough%20but%20not%20too%20dirty%20haha.%3C/p%3E%3Cp%3EGinger%20Ale,%20Lychee,%20and%20Raspberry%20-%20The%203%20Amigos%20Drink%3C/p%3E%3Cp%3EYield:%203-4%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20(14%20oz)%20can%20lychee%20in%20syrup,%20drained%3C/p%3E%3Cp%3E1/4%20cup%20fresh%20raspberry%3C/p%3E%3Cp%3E1/2%20tsp%20rose%20water%3C/p%3E%3Cp%3EGinger%20Ale%3C/p%3E%3Cp%3E4-5%20Ice%20cubes%20per%20shake%3C/p%3E%3Cp%3EBlender%3C/p%3E%3Cp%3ECheese%20cloth%20(optional)%3C/p%3E%3Cp%3EBartender%20Shake/Mixer%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EAdd%20lychee,%20raspberry,%20and%20rose%20water%20in%20a%20blender.%20Puree%20it%20until%20mix%20and%20has%20no%20chuck%20of%20fruit.%3C/p%3E%3Cp%3EIf%20you%20wish%20to%20have%20a%20clear%20looking%20drink,%20use%20cheesecloth%20to%20sieve%20the%20remain%20and%20chuck.%20If%20you%20don't%20have%20it,%20don't%20worry%20at%20all.%20A%20little%20chuck%20of%20fruit%20doesn't%20make%20the%20taste%20different.%3C/p%3E%3Cp%3EAdd%20ice%20cubes%20in%20a%20shaker,%20follow%20by%201/4%20cup%20raspberry%20and%20lychee%20mixture.%20Finish%20with%20ginger%20ale%20until%20almost%20full.%20Close%20the%20cap.%20Shake%20to%20mix%20well.%3C/p%3E%3Cp%3EBe%20careful%20while%20shaking.%20You%20will%20feel%20a%20pressure%20from%20the%20soda%20pushing%20the%20cap%20out.%20Make%20sure%20you%20close%20and%20hold%20it%20tight.%3C/p%3E%3Cp%3EPour%20in%20a%20glass%20and%20garnish%20with%20raspberry%20and%20lychee.%3C/p%3E%3Cp%3ERepeat%20the%20first%20step%20for%20the%20next%20glass.%3C/p%3E%3Cp%3Ewith%20some%20pulp%3C/p%3E%3Cp%3EAs%20Lazaro%20is%20one%20of%20the%20two%20behind%20this%20challenge,%20I%20will%20post%20another%20recipe%20inspired%20by%20his%20recipe%20-%20Pan%20roasted%20catfish%20with%20black%20beans.%20This%20is%20a%20guest%20post%20for%20Patty%20at%20Patty's%20Food.%20He%20made%20a%20flavorful%20soup%20and%20a%20sustainable%20fish.%20He's%20like%20a%20fish%20and%20seafood%20master%20to%20me.%20I%20deconstructed%20it%20to%20a%20sandwich.%20It%20tasted%20delicious!%20Keith%20also%20loves%20it!%20I%20adjusted%20a%20few%20ingredients%20to%20the%20ingredient%20access%20on%20my%20end.%20I%20also%20breaded%20catfish%20with%20cornmeal%20as%20they%20go%20well%20together.%20Catfish%20and%20cornmeal%20-Louisiana%20style.%20It's%20full%20of%20flavor%20and%20healthy.%20The%20original%20recipe%20you%20can%20find%20on%20his%20blog%20here.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%20up%20a%20skillet%20over%20medium%20heat.%20Add%20oil.%20Swirl%20to%20coat.%20Add%20shallot,%20and%20garlic.%20Saute%20until%20tender.%20Add%20onion%20and%20cook%20until%20it's%20translucent.%20Add%20beans%20and%20all%20the%20seasonings.%20Mix%20well%20and%20cook%20until%20the%20bean%20liquid%20is%20almost%20dry.%20Add%20tomatoes%20and%20wine.%20Simmer%20it%20for%2010%20mins.%20It%20should%20become%20dry%20enough%20like%20paste%20but%20still%20moist.%20Smash%20it%20with%20fork%20or%20wooden%20spoon.%3C/p%3E%3Cp%3ECatfish:%3C/p%3E%3Cp%3ECatfish%20fillets,%20skinned%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3EPepper%3C/p%3E%3Cp%3ECornmeal%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EDry%20fish%20with%20paper%20towel.%20Season%20with%20salt%20and%20pepper.%20Dredge%20the%20fish%20in%20cornmeal.%20Heat%20up%20skillet%20with%20oil.%20Pan%20fry%20the%20fish%20about%205%20mins%20on%20each%20side%20or%20cook%20through.%3C/p%3E%3
