Ginger Bars

Ingredientes

  • 1/2 stick (1/4 cup) butter
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 2 tsp vanilla
  • 3/4 cup white whole-wheat flour
  • 1/4 cup whole ground flaxseed meal
  • 2 tsp ground ginger
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped crystallized ginger

Direcciones

  1. Heat the oven to 350 F
  2. Line a 9 x 9 inch baking pan with nonstick foil
  3. Allow the foil to extend about 2 inches above the pan at both ends.
  4. Melt the butter over medium-low heat in a medium saucepan
  5. Remove from the heat
  6. Stir in the brown sugar
  7. Whisk in the egg and vanilla
  8. Whisk in the flour, flaxseed meal, ground ginger, baking powder, and the salt until blended
  9. Stir in the crystallized ginger
  10. Spread evenly in the prepared pan
  11. Bake for 18 to 24 minutes or until a wooden toothpick inserted in the center comes out clean
  12. Allow to cool in the pan on a wire rack
  13. Holding the foil by the ends, lift from the pan onto a cutting board
  14. Carefully cut lengthwise into 4 strips
  15. Cut each strip in 6
  16. Remove the foil
