Ginger Beet Smoothie

A little more than a month ago, I shared my go-to green smoothie recipe with you guys. That smoothie is probably still my favorite, but this afternoon, on a short reprieve from work, I headed home to break out the blender and try a new combination.
My main motivation? I wanted to try incorporating cabbage into my smoothie!
When Ryan and I were grocery shopping on Sunday, on the back of a bag of juicing apples was recipe for an apple cabbage juice that intrigued me. If cabbage tasted decent enough in a fresh juice for someone to publish a recipe that used it on a bag of apples, I figured it must blend well with other flavors.
I set out to use the cabbage in my smoothie but made sure to include my go-to green smoothie ingredients – ginger and lemon – as well. Ginger and lemon are my favorite add-ins because they seem to blend well with all different kinds of fresh fruits and vegetables.
In this particular smoothie, the flavor of the ginger and fresh beet took over which was fine by me!
Ginger Beet Smoothie
Ingredients
- 1 apple, chopped
- 1 large carrot, chopped
- 1 fresh beet, washed, scrubbed and cut into wedges
- Juice of 1 lemon
- 1/2 small head of cabbage, core removed
- 1 large handful fresh kale
- Fresh ginger, to taste (I used four relatively thin slices of fresh ginger)
- 1 1/2 cups cold water (may use more or less to reach desired consistency)
Directions:
Place all ingredients in a high-powered blender
Blend until everything is completely smooth and thin enough to to drink through a straw
If you have a juicer at home, you could easily use the same ingredients to make a delicious juice, but I enjoyed my smoothie with the fiber still in tact.
And a quick note about this smoothie: If you don’t have a high-powered blender, you may need to chop the fruits and veggies up very finely and blend it for quite a while. The texture will still likely not be very smooth, but the flavor should be the same.
