%20And%20then%20I%20thought%20to%20myself,%20perhaps%20he's%20not%20alone%20.%20.%20.%20and%20so%20I%20whipped%20up%20this%20tasty%20little%20ginger%20cake%20for%20any%20of%20those%20that%20are%20not%20digging%20my%20lemon%20inspiration,%20as%20insane%20as%20that%20may%20sound!!!%3C/p%3E%3Cp%3EOnly%20one%20problem%20.%20.%20.%20this%20cake%20is%20SOOO%20good%20that%20I'll%20now%20be%20tempted%20on%20two%20fronts%20instead%20of%20one%20.%20.%20.%3C/p%3E%3Cp%3EMy%20cake%20pan%20was%20not%20quite%20large%20enough%20so%20I%20put%20the%20extra%20batter%20into%20my%20yorkshire%20batter%20tins%20and%20baked%20the%20extra%20as%20little%20flat%20cupcakes.%20mmmm%20.%20.%20.%20these%20are%20some%20delicious.%20Nice%20and%20moist%20and%20gingery%20.%20.%20.%20and%20that%20buttery%20caramel%20icing%20.%20.%20.%20to%20die%20for.%3C/p%3E%3Cp%3EBut%20don't%20take%20my%20word%20for%20it.%20Make%20it%20and%20see%20for%20yourself!%3C/p%3E%3Cp%3E*Ginger%20Cake%20with%20Caramel%20Icing*%3C/p%3E%3Cp%3EServes%2010%3C/p%3E%3Cp%3EA%20deliciously%20divine%20cake%20filled%20with%20the%20spicy%20flavours%20of%20ginger,%20cinnamon%20and%20nutmeg%20and%20covered%20in%20a%20luciously%20buttery%20caramel%20icing.%20We%20didn't%20have%20any%20today,%20but%20vanilla%20ice%20cream%20is%20a%20given%20with%20this!%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20180*C/350*F.%20Butter%20and%20lightly%20flour%20a%20deep%2010%20inch%20ring%20pan.%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20all%20the%20cake%20ingredients%20in%20a%20large%20bowl.%20Beat%20with%20an%20electric%20mixer%20on%20low%20speed%20until%20combined.%20Increase%20the%20speed%20to%20medium%20and%20beat%20for%202%20minutes%20until%20the%20mixture%20is%20smooth%20and%20pale.%20Spoon%20into%20the%20prepared%20pan%20and%20bake%20for%20about%2035%20minutes,%20until%20well%20risen%20and%20the%20top%20springs%20back%20when%20lightly%20touched,%20or%20a%20toothpick%20inserted%20into%20the%20centre%20comes%20out%20clean.%20Allow%20to%20cool%20in%20the%20pan%20for%2010%20minutes%20before%20dumping%20out%20onto%20a%20wire%20rack%20to%20finish%20cooling.%3C/p%3E%3Cp%3EStir%20the%20butter,%20brown%20sugar%20and%20milk%20together%20in%20a%20small%20saucepan%20over%20heat%20until%20the%20sugar%20is%20totally%20dissolved.%20Bring%20to%20the%20boil,%20then%20reduce%20the%20heat%20and%20simmer%20for%202%20minutes.%20Remove%20from%20the%20heat%20and%20whisk%20in%20the%20icing%20sugar%20until%20smooth.%20Pour%20over%20the%20cooled%20cake.%3C/p%3E%3Cp%3EEnjoy!!!%3C/p%3E%3Cp%3EPS%20-%20I'll%20post%20the%20Lemon%20Tart%20tomorrow!%3C/p%3E){kind=link}
