Ginger Pork Balls In Sherry Orange Sauce

Ingredientes

  • 1 c. Fresh bread crumbs
  • 1/4 c. Christian Brothers golden brown sherry
  • 1 1/2 lb Lean grnd pork
  • 1/2 c. Chopped water chestnuts
  • 2 Tbsp. Soy sauce
  • 1 x Egg yolk
  • 2 tsp Grnd ginger
  • 1 x Clove garlic, crushed
  • 2 can (11 ounce) mandarin orange segments
  • 3/4 c. Chicken broth
  • 1/3 c. Christian Brothers golden brown sherry
  • 2 Tbsp. Cornstarch
  • 2 Tbsp. Soy sauce

Direcciones

  1. To make pork balls: In a large bowl combine bread and sherry; set aside for 10 min. Add in remaining ingredients except Sherry-Orange Sauce. Mix to blend thoroughly. Cover and refrigerateat least 30 min. Form into 1-inch balls. Place slightly apart on baking sheet. Bake in a 400 F oven about 20 min or possibly till cooked through and slightly browned.
  2. Meanwhile, prepare Sherry-Orange Sauce. Add in liquid removed pork balls to sauce.
  3. Cook over medium heat till warm through, stirring gently. Remove from heat; gently stir in orange segments (reserved in the Sherry-Orange Sauce recipe). Serve warm with cocktail picks for spearing.
  4. Makes about 5 dozen.
  5. To make sherry-orange sauce: Drain liquid from orange segments into a 2-c. measure; reserve segments. Add in broth to orange liquid to make 2 c.. Pur into a 2-qt saucepan. Mix sherry, cornstarch and soy sauce; add in to saucepan. Cook and stir over medium heat till smooth and thickened. Simmer one minute.
