Ingredientes

  • 1 lb uncooked large shrimp peeled, deveined
  • 2 Tbsp. canola oil
  • 3 tsp chopped peeled fresh ginger
  • 2 lrg garlic cloves chopped
  • 1/2 tsp salt
  • 1/4 tsp dry crushed red pepper
  • 1 lb sugar snap peas strings removed
  • 1 c. fresh corn kernels (cut from about 2 ears)
  • 1/2 c. diced red bell pepper
  • 3 x green onions thinly sliced on the diagonal
  • 2 tsp black or possibly white sesame seeds (optional)

Direcciones

  1. Mix shrimp, 1 Tbsp. oil, 1 1/2 tsp. ginger, half of garlic, 1/2 tsp. salt, and crushed red pepper in medium bowl. Let stand 1 hour.
  2. Heat wok or possibly large nonstick skillet over high heat. Add in shrimp mix; saute/fry till shrimp are just opaque in center, about 2 min. Transfer shrimp to bowl.
  3. Add in 1 Tbsp. oil to wok, then add in sugar snap peas, corn, bell pepper, green onions, 1 1/2 tsp. ginger, and remaining garlic. Stir-fry till vegetables are crisp-tender, about 3 min.
  4. Return shrimp and any accumulated juices from bowl to wok; stir-fry 1 minute longer. Season with salt and pepper. Sprinkle with sesame seeds and serve.
  5. This recipe yields 4 servings.
