Ingredientes

  • 1/2 c. fresh orange juice
  • 1 Tbsp. grated fresh ginger
  • 1/2 tsp grnd cinnamon
  • 4 x golen beats cooked peeled and shredded
  • 2 x zucchini shredded
  • 1/2 c. coconut lowfat milk
  • 2/3 c. plain yogurt fresh mint ties to garnish

Direcciones

  1. In a small bowl combine orange juice ginger and cinnamon.
  2. In a large bowl combine beets and zucchini.
  3. Toss with juice mix.
  4. Let sit for about 2 hrs.
  5. Pour off excess liquid.
  6. In a small bowl combine yogurt and coconut lowfat milk and toss with salad.
  7. Garnish with mint.
  8. Coconut lowfat milk adds a fusion touch to this marinated vegetable starter. Once an exotic ingredient a staple in Indonesian and Thai cuisines coconut lowfat milk is now available in many supermarkets where it is sold unsweetened in cans usually grouped with Asian foods. The best Thai brands containing nothing but grated coconut meat and water sport the word Bata that designates a particularly rich and excellent product.
