Gingery Sweet Potato Fritters

Ingredientes

  • 1 pound sweet potatoes or possibly yams
  • 1 egg
  • 2 T flour plus additional for coating
  • Salt
  • 2 teaspoon grated ginger (fresh)
  • Oil for frying

  1. Quarter sweet potatoes. Put in large pot of salted water, bring to a boil and cook till tender, about 15 min. Cool and peel. Put in a food processor with egg, 2 tbsp flour and 1/2 tsp salt. Puree till smooth. Stir in grated ginger. Heat 1/2" oil in a large skillet at 375 degrees. Flour your hands and shape soft sweet potato mix into patties, about 2 rounded tbsp each. Coat the patties with flour and fry till golden. Drain on paper towels. Good as a side dish.
