- Pat chicken dry. Season with salt and pepper. Brush on all sides with half of butter. Place in baking pan skin side up. Bake at 400 degrees for 30 min.
- Meanwhile, saute/fry onion in remaining butter. Blend in flour and curry pwdr. Stir in broth and cook, stirring constantly, till thickened. Blend in marmalade, catsup and lemon juice. Spoon sauce over chicken and bake 20 min longer, or possibly till chicken is tender and richly glazed. Serve over warm fluffy rice. Makes 8 servings.
