I can see why I became addicted to reading food blogs, about five years ago. They're so visual. I fall into the category of folks who tastes with my eyes. All it takes is for a mouth-watering photo to pop out of the screen, and my brain goes into crave mode.
Seriously, it's become a problem and I can't help myself. That's exactly what happened when Cathy of "Wives With Knives" posted her recipe for Glazed Apple Pie Bars. I could not stop thinking about that recipe!

%20I'd%20have%20to%20ask%20Alton%20Brown%20why%20that%20is,%20but%20it%20works--%20and%20you%20can't%20taste%20the%20vinegar,%20either.%3C/p%3E%3Cp%3EHowever,%20I%20find%20that%20the%20dough%20can%20be%20a%20little%20testy%20to%20work%20with,%20because%20it%20breaks%20apart%20and%20requires%20a%20bit%20of%20patching.%20%20That's%20why%20I%20found%20making%20a%20pie%20in%20a%20half-sheet%20baking%20pan%20makes%20the%20task%20easier%20to%20do.%20Thanks,%20Cathy,%20for%20that%20tip,%20because%20I%20have%20one%20of%20these%20pans%20and%20I%20use%20it%20all%20the%20time.%3C/p%3E%3Cp%3EThere%20are%20two%20ingredients,%20that%20I%20order%20from%20King%20Arthur%20Flour%20(online)%20that%20I%20cannot%20be%20without.%20One%20of%20them%20is%20their%20Boiled%20Cider.%3C/p%3E%3Cp%3EI%20add%20it%20to%20any%20recipe%20that%20uses%20apples,%20because%20it%20kicks%20up%20the%20flavor%20in%20%20a%20very%20good%20way.%20%20It's%20super%20concentrated,%20so%20you%20can%20even%20use%20it%20to%20make%20apple%20cider.%3C/p%3E%3Cp%3EThe%20other%20ingredient%20that%20I%20love%20is%20Instant%20ClearJel.%20%20I%20mix%20this%20to%20the%20sugar,%20before%20adding%20it%20to%20any%20fruit%20pie%20filling.%20%20Instant%20ClearJel%20doesn't%20%22cloud%22%20my%20fillings%20and%20does%20a%20great%20job%20of%20preventing%20runny%20pies.%20Win!%20%20For%20this%20pie%20filling,%20I%20used%201%20cup%20sugar,%20cinnamon,%20nutmeg%20and%20allspice%20and%20some%20fresh%20lemon%20juice.%3C/p%3E%3Cp%3EOnce%20the%20apple%20filling%20was%20spread%20onto%20the%20bottom%20half%20of%20the%20pie%20crust,%20I%20dotted%20it%20with%20unsalted%20butter,%20then%20topped%20it%20with%20the%20second%20crust.%20%20TIP:%20%20Parchment%20paper%20makes%20this%20easier%20to%20do.%20%20Once%20the%20crust%20is%20rolled,%20on%20top%20of%20the%20parchment%20paper,%20I%20can%20just%20flip%20it%20onto%20the%20baking%20sheet.%20Much%20easier!%3C/p%3E%3Cp%3EI%20like%20to%20make%20an%20egg%20wash,%20to%20brush%20on%20top%20of%20the%20pie%20crust.%20%20(You%20can%20also%20use%20heavy%20cream.)%20%20I%20buy%20sparkling%20sugar%20--%20where%20else--%20from%20King%20Arthur%20Flour.%20%20I%20sprinkle%20it%20on%20top%20and%20then%20set%20the%20pie%20on%20a%20large%20baking%20sheet%20(or%20my%20baking%20stone)%20at%20375F%20for%20about%2035-45%20minutes.%3C/p%3E%3Cp%3EI%20debated%20about%20adding%20the%20glaze,%20since%20there%20was,%20already,%20%20sugar%20on%20top...but%20I%20ultimately%20decided%20to%20try%20it.%3C/p%3E%3Cp%3EAs%20an%20afterthought,%20I%20realized%20that%20caramel%20would%20be%20a%20fun%20twist%20or%20even%20maple%20to%20the%20glaze%20would%20be%20fun.%20This%20time,%20I%20stuck%20with%20powdered%20sugar%20and%20water.%3C/p%3E%3Cp%3EMy%20cooling%20racks%20fit%20perfectly%20over%20my%20kitchen%20sink,%20so%20that's%20where%20I%20do%20all%20of%20my%20%22drizzling%22.%20It%20makes%20cleanup%20so%20much%20easier!%20%20(You're%20welcome.)%20Cathy%20adds%20chopped%20walnuts,%20which%20sounds%20fantastic.%20My%20son%20doesn't%20like%20them,%20so%20I%20opted%20out.%3C/p%3E%3Cp%3EI%20was%20losing%20natural%20light,%20fast,%20so%20I%20couldn't%20get%20really%20good%20shots%20of%20the%20pie--%20and%20I%20was%20anxious%20to%20taste%20this%20pie.%20I%20sliced%20into%20it,%20while%20it%20as%20still%20warm.%20Vanilla%20ice%20cream%20would%20have%20been%20a%20nice%20touch,%20but%20I%20went%20au%20naturel.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20This%20%20crust%20is%20my%20new%20favorite%20(always%20subject%20to%20change).%20%20It's%20very%20tender.%20%20I%20loved%20the%20cinnamon%20in%20the%20filling,%20but%20you%20could%20certainly%20leave%20it%20out.%20%20Using%20a%20blend%20of%20apples%20is%20a%20good%20way%20to%20go,%20because%20you%20have%20sweet%20and%20the%20Granny%20Smith%20tart,%20plus%20you%20have%20different%20levels%20of%20apple%20texture...from%20soft%20to%20slightly%20crispy.%20%20I%20liked%20the%20crunchiness%20of%20the%20sugar%20and%20the%20glaze%20was%20a%20nice%20touch,%20as%20well.%20This%20pie%20was%20a%20hit%20with%20all%20of%20us,%20and%20a%20friend%20described%20this%20as%20%22the%20best%20strudel%20he%20has%20ever%20eaten%22.%20%20I%20can%20see%20why,%20because%20the%20pastry%20is%20so%20tender.%3C/p%3E%3Cp%3EThis%20recipe%20goes%20on%20the%20top%20of%20the%20pile%20as%20a%20%22keeper%20recipe%22.%20%20Cathy,%20thanks%20for%20inspiring%20me%20to%20make%20a%20pie%20in%20a%20non-traditional%20pan.%20%20This%20would%20be%20perfect%20as%20%20a%20potluck%20kind%20of%20dessert,%20because%20you%20can%20make%20smaller%20slices%20to%20go%20around.%3C/p%3E){kind=link}
