%20%20%E2%80%93%20and%20it%20wasn%E2%80%99t%20quite%20right.%20%20The%20night%20before%20I%20had%20tried%20a%20sweet%20and%20savory%20cookie%20recipe%20for%20a%20local%20friend%20%E2%80%93%20it%20also%20wasn%E2%80%99t%20quite%20right%20(all%20I%E2%80%99ll%20say%20is%20peanut%20butter%20and%20duck%20fat%E2%80%A6%20it%E2%80%99s%20coming).%20%20I%20was%20a%20bit%20of%20a%20grumpy%20dusty%20baker.%3C/p%3E%3Cp%3ESo%20there%20was%20to%20be%20no%20failing%20with%20this%20recipe.%20%20Not%20only%20did%20I%20have%20some%20friends%20I%20wanted%20to%20bring%20something%20sweet%20to,%20but%20I%20wanted%20to%20get%20back%20to%20the%20gluten-dairy-sugar%20alternative%20baking%20that%20is%20a%20major%20part%20of%20my%20food%20lifestyle,%20which%20had%20been%20neglected%20a%20bit%20by%20all%20the%20baking%20I%E2%80%99ve%20been%20doing%20for%20other%20organizations.%20%20And%20I%20had%20a%20short%20amount%20of%20time%20before%20heading%20downtown%20again.%3C/p%3E%3Cp%3EI%20looked%20at%20a%20bunch%20of%20cookie%20recipes%20%E2%80%93%20both%20those%20with%20and%20without%20gluten%20%E2%80%93%20and%20was%20shocked%20at%20the%20amount%20of%20sugar%20or%20sweetener%20the%20recipes%20called%20for.%20%20White%20and%20brown%20sugar,%20and%20a%20lot%20of%20it?!%20%20A%20cup%20and%20a%20half%20of%20agave%20syrup?%20No,%20thank%20you!%3C/p%3E%3Cp%3EI%20wanted%20my%20cookies%20to%20be%20simple,%20wholesome%20and%20just-sweet-enough.%3C/p%3E%3Cp%3ESo%20I%20used%20only%201/2%20cup%20of%20maple%20syrup%20for%20sweetness,%20added%20a%20bit%20of%20dark%20molasses%20to%20replace%20the%20flavor%20missing%20from%20the%20absence%20of%20brown%20sugar,%20and%20added%20some%20flaxseed%20meal%20for%20fiber.%20%20I%20used%20shortening%20for%20stability.%20%20I%20added%20some%20black%20pepper%20for%20a%20savory%20kick,%20and%20threw%20in%20a%20healthy%20spoonful%20of%20my%20favorite%20Vietnamese%20cinnamon%20along%20with%20some%20freshly%20grated%20nutmeg%20(they%E2%80%99re%20totally%20worth%20it).%20%20I%20followed%20the%20advice%20of%20Karina%20at%20the%20Gluten-Free%20Goddess%20and%20kept%20rice%20flour%20out%20of%20the%20recipe%20(I%20based%20my%20proportions%20off%20of%20her%20recipe,%20which%20%20is%20stellar%20%E2%80%93%20thank%20you%20Karina!).%3C/p%3E%3Cp%3EI%20love%20the%20results.%20%20For%20me,%20these%20are%20the%20perfect%20cookies%20to%20dunk.%20%20Slightly%20sweet%20and%20spicy,%20soft,%20a%20perfect%20vehicle%20for%20the%20delicious%20chocolate%20that%20sits%20nestled%20within%20the%20oatmeal.%3C/p%3E%3Cp%3EThey%E2%80%99d%20also%20be%20stellar%20with%20raisins.%3C/p%3E%3Cp%3EStart%20to%20finish,%20it%20took%20me%2045%20minutes%20to%20make,%20bake%20and%20wrap%2036%20of%20these%20babies.%3C/p%3E%3Cp%3EI%20was%20a%20happy%20camper.%20%20I%20brought%20a%20few%20to%20a%20friend%20to%20nosh%20on%20over%20some%20cheap%20whiskey%20and%20a%20game%20of%20chess%20(which%20I%E2%80%99m%20not%20as%20bad%20at%20as%20I%20had%20previously%20thought)%20and%20to%20another%20friend%20I%20met%20up%20with%20for%20a%20post-show%20glass%20of%20wine.%20%20And%20may%20have%20eaten%20a%20few%20for%20breakfast%20before%20heading%20off%20to%20a%20late%20brunch%20with%20food-blog%20people%20the%20next%20morning.%20%20Followed%20by%20an%20awesome%20Bloody%20Derby%20and%20Stumptown%20Coffee.%3C/p%3E%3Cp%3EOK,%20Autumn%20weekends%20in%20New%20York%20City%20can%20be%20pretty%20awesome.%20%20This%20one%20was%20delicious.%3C/p%3E%3Cp%3EWait,%20what%E2%80%99s%20a%20Bloody%20Derby,%20you%20ask?%20Oh,%20let%E2%80%99s%20just%20say%20an%20incredible%20cocktail%20I%20introduced%20a%20few%20people%20to%20at%20the%20Ace%20hotel%20(and%20had%20to%20name).%20%20I%20think%20it%20will%20go%20along%20swimmingly%20with%20a%20duck-fat%20cookie.%20Coming%20soon%20to%20a%20Dusty%20Baker%20near%20you.%3C/p%3E%3Cp%3EI%20may%20have%20eaten%20this%20entire%20stack%20of%20cookies%20for%20breakfast%20today.%20Yes,%20salad%20for%20dinner.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0.%3C/p%3E%3Cp%3ELine%203%20baking%20sheets%20with%20parchment%20paper%20or%20Silpats%20(totally%20worth%20the%20$).%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20all%20dry%20ingredients%20up%20to%20the%20black%20pepper%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20standing%20mixer%20(or%20in%20a%20large%20bowl)%20beat%20shortening%20on%20high%20heat%20until%20fluffy.%3C/p%3E%3Cp%3EAdd%20eggs,%20maple%20syrup%20and%20molasses%20and%20beat%20until%20smooth%20and%20fluffy,%20about%202%20minutes%20(beating%20the%20eggs%20gives%20a%20little%20lift%20and%20body%20to%20the%20coming%20flours).%3C/p%3E%3Cp%3EQuickly%20beat%20in%20the%20vanilla.%3C/p%3E%3Cp%3EAdd%20all%20the%20flour,%20turn%20speed%20down%20to%20low,%20and%20mix%20until%20just%20combined.%3C/p%3E%3Cp%3EFold%20in%20the%20oats%20a%20cup%20at%20a%20time%20until%20distributed%20evenly.%3C/p%3E%3Cp%3EFold%20in%20the%20chocolate%20chips%20(or%20raisins!)%20and%20optional%20nuts.%3C/p%3E%3Cp%3
