%20were%20somehow%20even%20stronger%20last%20year.%20Of%20course%20I%20didn%E2%80%99t%20actually%20get%20to%20try%20anyone%20else%E2%80%99s%20cookies%20(or%20the%20gorgeous%20canelles%20that%20Dessertbuzz%20brought%20and%20we%20were%20all%20oohing%20and%20aahing%20over!)%20because%20mine%20were%20the%20only%20gluten-free%20option%20of%20the%20bunch.%20I%20wasn%E2%80%99t%20going%20to%20even%20label%20them%20as%20such,%20but%20did%20just%20in%20case%20there%20was%20another%20%E2%80%9Cme%E2%80%9D%20in%20attendance.%20When%20Niko%20(Dessertbuzz)%20told%20me%20to%20check%20out%20the%20%E2%80%9Creally%20spicy%20cookies%E2%80%9D%20and%20I%20responded,%20%E2%80%9CThey%E2%80%99re%20mine!%E2%80%9D,%20I%20was%20rewarded%20with%20a%20happy%20face%20standing%20next%20to%20them,%20noshing%20away.%20He%E2%80%99d%20been%20trying%20to%20stick%20to%20a%20gluten-free%20diet,%20and%20was%20psyched%20to%20find%20my%20little%20plate%20amongst%20the%20gorgeous%20spread.%3C/p%3E%3Cp%3ESo,%20yes,%20these%20are%20really%20spicy%20gluten-free%20ginger%20snaps!%3C/p%3E%3Cp%3EWhich%20is%20exactly%20what%20I%E2%80%99d%20wanted%20%E2%80%94%20a%20cookie%20that%20truly%20put%20the%20snap!%20back%20in%20gingersnap!%3C/p%3E%3Cp%3EThese%20contain%20dried,%20freshly%20grated%20and%20chopped%20candied%20ginger,%20all%20slowly%20baked%20into%20a%20crunchy%20cookie%20reminiscent%20of%20the%20ones%20I%20remember%20from%20childhood.%20Following%20the%20advice%20of%20my%20beloved%20Cooks%20Illustrated,%20I%20made%20sure%20a%20good%20deal%20of%20baking%20powder%20helped%20the%20cookies%20rise%20and%20crack,%20to%20release%20some%20steam%20and%20therefore%20retain%20a%20nice%20level%20of%20crisp.%20I%20also%20baked%20them%20at%20a%20lower%20temperature%20for%20a%20longer%20time,%20so%20that%20they%20dried%20out%20a%20bit%20more%20as%20well.%3C/p%3E%3Cp%3EI%E2%80%99m%20quite%20pleased%20with%20this%20little%20saucy%20babies.%20Let%20me%20know%20your%20thoughts%20if%20you%20make%20them.%3C/p%3E%3Cp%3EHo,%20ho,%20snap!%3C/p%3E%3Cp%3E-%20Jacqueline%20xoxo%3C/p%3E%3Cp%3E%7Bgluten-free%7D%203-Ginger%20Snaps!%3C/p%3E%3Cp%3EMakes%20about%2040%20cookies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ECream%20butter%20and%20sugar.%20Add%20eggs%20one%20at%20at%20time,%20beating%20until%20incredibly%20light%20and%20fluffy.%20Add%20molasses%20and%20fresh%20ginger%20and%20beat%20in%20to%20incorporate.%3C/p%3E%3Cp%3EReduce%20mixer%20to%20low,%20and%20slowly%20add%20dry%20ingredients.%20Then%20stir%20in%20candied%20ginger.%3C/p%3E%3Cp%3ERefrigerate%20batter%20for%20one%20hour,%20or%20until%20almost%20firm.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake,%20heat%20oven%20to%20300%20degrees%20F%20and%20put%20two%20racks%20in%20the%20upper%20and%20lower%20third%20of%20oven.%20Line%20baking%20sheets%20with%20parchment%20or%20Silpat.%20Roll%20dough%20into%201%E2%80%B3%20balls,%20and%20roll%20completely%20in%20white%20sugar,%20setting%2012%20cookies%20on%20a%20sheet.%20Bake%20on%20the%20top%20rack%20for%2010%20minutes,%20then%20rotate%20and%20bake%20on%20bottom%20rack%20for%20another%208-10,%20until%20the%20tops%20start%20to%20color%20(so%20basically%20start%20one%20tray%20on%20top%20as%20you%20prep%20your%20second,%20and%20then%20have%20two%20going%20at%20the%20same%20time%20%E2%80%93%20this,%20again,%20helps%20them%20bake%20to%20ultimate%20crispness!).%3C/p%3E%3Cp%3EMy%20batch%20made%2040%20cookies,%20but%20I%20can%20see%20how%20cute%20and%20even%20more%20authentically-original%20looking%20if%20they%20were%20even%20smaller.%20The%20Cooks%20Illustrated%20recipe%20says%20their%20batch%20makes%2080%20cookies,%20which%20makes%20me%20think%20they%E2%80%99re%20the%20traditional%20smaller%20size.%20Take%20this%20into%20consideration%20if%20you%20want%20to%20bake%20them%20smaller,%20just%20reducing%20the%20baking%20time%20appropriately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
