Ingredientes
- 2 cups plus 4 Tbsp of teff flour
- 12 Tbsp white rice flour
- 1/2 cup of good quality dark unsweetened cocoa powder
- 2 sticks unsalted butter at room temperature or an equal amount (1 cup) of vegan shortening
- 1/2 cup of granulated sugar
- 1/4 tsp kosher salt
- For the Ganache
- 1/2 cup of whipping cream, or full fat coconut milk

%20them.%20This%20is%20a%20delicious%20and%20easily%20made%20cookie,%20so%20in%20case%20you%20can't%20get%20out%20to%20CocoaPlanet%20in%20person,%20you%20can%20buy%20their%20chocolate%20and%20make%20these%20at%20home.%20In%20fact%20all%20of%20the%20ingredients%20are%20easily%20found%20at%20any%20Whole%20Foods%20or%20natural%20foods%20market.%3C/p%3E%3Cp%3EGluten%20Free%20Chocolate%20Shortbread%20Cookies%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EFor%20the%20Cookies%3C/p%3E%3Cp%3E10%20oz%20of%20CocoaPlanet%20Mandarin%20Orange%20Chocolate.%3C/p%3E%3Cp%3EHere's%20What%20to%20Do:%3C/p%3E%3Cp%3EMix%20together%20the%20rice%20flour%20and%20teff%20flour.%20I%20always%20keep%20a%20container%20of%20this%20rice%20flour/%20teff%20flour%20mix%20in%20the%20house%20ever%20since%20Alice%20Medrich%20came%20to%20lunch%20at%20our%20place%20and%20turned%20me%20on%20to%20it.%20As%20Alice%20has%20pointed%20out%20in%20her%20book%20Flavor%20Flours,%20Teff%20flour%20is%20a%20killer%20mix%20with%20chocolate.%20This%20stuff%20is%20a%20good%20thing%20to%20have%20around%20if%20you%20are%20a%20gluten%20free%20chocolate%20lover.%3C/p%3E%3Cp%3EScoop%20out%201%20and%201/2%20cups%20of%20the%20teff%20/%20rice%20flour%20mix%20you%20made.%3C/p%3E%3Cp%3ESift%20this%20flour%20mix%20together%20with%20the%20cocoa%20powder,%20and%20kosher%20salt%20and%20set%20it%20aside.%3C/p%3E%3Cp%3EIn%20an%20electric%20mixer%20or%20with%20a%20hand%20mixer%20beat%20the%20butter%20or%20shortening%20for%20about%204%20minutes%20or%20until%20it's%20nice%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20in%20the%20sugar.%3C/p%3E%3Cp%3EBeat%20it%20for%20about%20another%202%20minutes.%3C/p%3E%3Cp%3EAdjust%20your%20speed%20to%20low%20and%20add%20in%20the%20flour%20cocoa%20mixture.%3C/p%3E%3Cp%3EMix%20it%20together%20on%20a%20low%20speed%20until%20everything%20in%20combined%20and%20the%20dough%20sticks%20together.%3C/p%3E%3Cp%3ELay%20down%20some%20waxed%20paper.%3C/p%3E%3Cp%3EPlace%20the%20cookie%20dough%20on%20it%20and%20shape%20it%20into%20a%20disc.%3C/p%3E%3Cp%3ELay%20more%20waxed%20paper%20on%20top%20and%20flatten%20the%20dough%20until%20it's%20about%201/4%20inch%20thick.%20I%20do%20this%20because%20the%20dough%20is%20going%20to%20be%20cut%20with%20a%20cookie%20cutter%20when%20it's%20firm.%3C/p%3E%3Cp%3EPlace%20the%20cookie%20dough%20into%20the%20fridge%20to%20firm%20up.%20This%20takes%20about%201%20hour.%3C/p%3E%3Cp%3EYou%20can%20also%20roll%20the%20dough%20into%20a%20log%20shape%20and%20wrap%20it%20in%20waxed%20paper.%20Doing%20it%20that%20way%20allows%20you%20to%20just%20cut%20pieces%20off%20the%20log%20and%20bake%20them%20whenever%20you'd%20like.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20degrees.%3C/p%3E%3Cp%3EAfter%20the%20dough%20has%20firmed%20up,%20take%20it%20from%20the%20fridge%20and%20smooth%20it%20out%20a%20bit%20with%20a%20rolling%20pin%20to%20get%20it%20to%20the%20thickness%20you'd%20like.%20Always%20keep%20waxed%20paper%20between%20the%20dough%20and%20the%20rolling%20pin%20so%20nothing%20sticks.%3C/p%3E%3Cp%3EPlace%20a%20piece%20of%20parchment%20paper%20or%20a%20silicone%20baking%20mat%20on%20a%20cookie%20sheet.%3C/p%3E%3Cp%3EUsing%20a%20small%20round%20cookie%20or%20biscuit%20cutter,%20punch%20out%20round%20cookies%20and%20place%20them%20about%20an%20inch%20apart%20on%20the%20sheet.%20They%20will%20spread%20while%20baking.%3C/p%3E%3Cp%3EYou%20want%20them%20to%20be%20about%20this%20thick.%3C/p%3E%3Cp%3EWhen%20they're%20all%20on%20the%20cookie%20sheet%20place%20them%20in%20the%20oven%20and%20bake%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3ETake%20them%20out%20and%20let%20them%20cool%20on%20the%20cookie%20sheet%20for%20about%205%20minutes%20or%20so%20and%20then%20transfer%20them%20to%20a%20cooling%20rack.%3C/p%3E%3Cp%3EMeanwhile%20mix%20the%20Ganache%20according%20to%20this%20recipe.%3C/p%3E%3Cp%3EWhen%20the%20cookies%20have%20cooled%20ice%20them%20on%20one%20half%20of%20one%20side.%3C/p%3E%3Cp%3EPlace%20them%20on%20a%20cooling%20rack%20so%20the%20ganache%20can%20set.%3C/p%3E%3Cp%3EDon't%20refrigerate%20these%20cookies,%20just%20keep%20them%20in%20an%20airtight%20container%20to%20store%20them.%20You%20likely%20won't%20be%20keeping%20them%20too%20long,%20as%20these%20don't%20last%20especially%20around%20kids!%20Here's%20a%20delicate%20serving%20suggestion..but%20who%20am%20I%20kidding?%3C/p%3E%3Cp%3EJust%20reach%20in%20a%20grab%20a%20fistful.%20Your%20gluten%20free/%20vegan%20friends%20will%20thank%20you,%20and%20those%20that%20aren't%20will%20never%20know%20the%20difference%20unless%20you%20tell%20them.%20Right%20now%20there's%20only%20one%20place%20to%20get%20these%20and%20that's%20my%20house..but%20as%20soon%20as%20CocoaPlanet%20opens%20here%20in%20Sonoma...they'll%20be%20on%20the%20menu.%3C/p%3E%3Cp%3EWe're%20pretty%20excited%20here%20about%20another%20project%20we're%20doing%20that's%20going%20to%20be%20coming%20up%20on%20the%20day%20after%20Thanksgiving%20aka%20Black%20Friday%20when%20The%20Colors%20of%20Indian%20Cooking%20comes%20to%20the%20Fer
