Receta Gluten Free Crispy Buttermilk Chicken
I love Cooking Light recipes. I have yet to try one that hasn’t turned out to be delicious, and this past Friday’s recipe was no exception.
Gluten Free Panko Crusted Buttermilk Chicken with Roasted Corn Hash
Positively delicious! And actually, pretty easy to make.
I followed the Cooking Light recipe step by step. The only changes I made were using a Gluten Free Panko, and I added about 1/4 cup Gluten Free All Purpose Flour to the Panko to give it extra sticking power. For the Panko, I used Ian’s, but I prefer Kinnikinnick, you get more for your $$.

I also skipped the homemade Buttermilk dressing. I just drizzled a tablespoon of Wishbone Ranch instead.
I love the crispy Panko skin, and I couldn’t believe how well it stuck to the chicken!
Bonus points: It was delicious reheated for lunch on Saturday! Mmmm Corn Hash. So good!
