Receta Gluten Free Five-Ingredient Chocolate Chip Cookies
Do you need an easy chocolate chip cookie recipe that’s also gluten free? Well, look no further! Thanks to the folks at Martha Stewart Living, I bring you a quick and easy gluten free chocolate chip recipe that only contains five ingredients. This cookie recipe is perfect for holiday cookie exchanges, teacher appreciations, potlucks, or just when you feel like making up a batch of something yummy.
The recipe for Five-Ingredient Chocolate Chip Cookies is featured in the “Good Things” section of the March 2015 issue of Martha Stewart Living magazine. I often find some of my favorite little tips, hints and recipe gems in this column.
Now this recipe features almond butter, so it’s obviously not nut free and a no-no to bring to school parties with all the nut allergies kids have these days. However, I’m sure substituting sunflower butter – one of my favorite indulgences – would work just as well. I like Trader Joe’s brand as well as SunButter Natural’s sunflower butter. Just make sure to blend the sunflower or almond butter really well before using it the cookie recipe. You don’t want it too oily or too dry.
I also recommending using one of the allergy free semi-sweet chocolate chips like Enjoy Life makes, which are gluten free, nut free, soy free and dairy free. You can buy Enjoy Life chocolate chips for your Gluten Free 5-Ingredient Chocolate Chip Cookies online or at Target.
Other highlights of the March 2015 issue
Other dessert recipes featured in the March 2015 include a Mango Upside-Down Cake. This is a gorgeous recipe and I have a sneaking suspicion that maybe, just maybe this recipe could be made gluten free with a good all purpose gluten free blend or a gluten free sponge cake mix. If you have experience with gluten free baking you may want to give it a try.
The March issue also features a Scones with Pears, Irish Cheddar and Honey, which is perfect for St. Patrick’s Day. However, this would be much trickier making gluten free. Instead, if you’re in the mood for gluten free scones, try my recipe for Gluten Free Pumpkin Chocolate Raisin Scones instead!
Gluten Free Five-Ingredient Chocolate Chip Cookies
Ingredients
- 1 cup almond butter
- 1 cup semisweet chocolate chips
- 1/2 cup packed light-brown sugar
- 2 large eggs
- 1/2 teaspoon coarse salt
Directions
Preheat oven to 350 degrees. In a bowl, stir together almond butter, chocolate chips, sugar, eggs, and salt until a dough forms.
Place 1-tablespoon mounds of dough 1 inch apart on parchment-lined baking sheets. Bake cookies until puffed and tops are set, about 10 minutes.
Transfer to a wire rack; let cool. Cookies can be stored in an airtight container up to 3 days.

Cook Time: 15 Minutes
Total Time: 25 Minutes
Servings: Makes 30 cookies.
