.%3C/p%3E%3Cp%3EThe%20gluten%20free%20Focaccia%20recipe%20came%20from%20Gluten%20Free%20Goddess.%3C/p%3E%3Cp%3EOf%20course%20I%20didn%E2%80%99t%20follow%20the%20recipe%20exactly!%20Were%20you%20expecting%20anything%20different?%3C/p%3E%3Cp%3EHere%20is%20her%20recipe%20in%20black%20with%20my%20changes%20in%20red:%3C/p%3E%3Cp%3EStir%20to%20combine.%20The%20dough%20should%20be%20sticky-%20it%20doesn't%20really%20feel%20like%20typical%20wheat%20bread%20dough-%20more%20like%20a%20thick%20muffin%20batter.%20*It%20really%20is%20gloppy%20and%20scoops%20and%20flattens%20very%20well.%3C/p%3E%3Cp%3EScoop%20the%20dough%20into%20a%209-inch%20cake%20pan%20dusted%20with%20cornmeal.%20Using%20wet%20hands%20pat%20and%20shape%20the%20dough%20into%20a%20rounded%20loaf.%20Top%20with%20sliced%20tomatoes%20and%20fresh%20garlic;%20sprinkle%20with%20extra%20herbs%20and%20a%20little%20sea%20salt.%3C/p%3E%3Cp%3E*%20I%20have%20cherry%20tomatoes%20that%20were%20oven%20roasted%20in%20my%20freezer%20and%20used%20these%20to%20top%20the%20focaccia.%20%20Heat%20%C2%BC%20cup%20olive%20oil%20on%20low%20heat%20with%204%20cloves%20of%20peeled%20garlic-heat%20until%20fragrant%20and%20garlic%20starts%20to%20color%20up.%20Smash%20the%20garlic%20cloves%20with%20the%20back%20of%20a%20spoon%20and%20let%20cool.%20%20Top%20the%20focaccia%20with%20the%20tomatoes,%20smashed%20garlic%20and%20at%20least%202%20TBSP%20of%20the%20oil,%20sprinkle%20with%20sea%20salt.%3C/p%3E%3Cp%3EPlace%20the%20pan%20into%20the%20warm%20oven%20and%20allow%20it%20to%20rest%20and%20rise%20for%2020%20minutes.%20Turn%20on%20the%20oven%20to%20375%20degrees%20F.%20Once%20the%20oven%20is%20375%20degrees,%20put%20the%20timer%20on%20for%2025%20minutes.%20Bake%20until%20golden%20and%20firm.%20If%20you%20thump%20it%20it%20should%20sound%20hollow.%20%20*Remove%20the%20focaccia%20from%20the%20pan%20and%20return%20to%20the%20oven%20to%20brown%20the%20bottom%20and%20create%20more%20of%20an%20artisan%20type%20bread%20(baking%20stone%20would%20be%20nice%20for%20this).%3C/p%3E%3Cp%3ERemove%20from%20the%20pan%20as%20soon%20you%20can%20and%20cool%20it%20on%20a%20wire%20rack.%20Slice%20with%20a%20sharp%20bread%20knife.%20Makes%208%20wedges.%3C/p%3E%3Cp%3EIf%20you%20bake%20at%20a%20lower%20altitude,%20or%20you%20use%20eggs,%20the%20loaf%20might%20be%20done%20sooner-%20closer%20to%2022%20to%2025%20minutes.%20Keep%20an%20eye%20on%20it.%20%20*This%20wasn't%20an%20issue%20for%20me,%20getting%20it%20done%20enough%20was%20more%20my%20concern.%3C/p%3E%3Cp%3EDUH%20MOMENT:%20I%E2%80%99ve%20been%20making%20raspberry-chipotle%20sauce%20since%20last%20summer,%20pull%20a%20bag%20of%20berries%20out%20of%20the%20freezer%20and%20off%20we%20go.%20%20This%20last%20time%20I%20was%20making%20sauce%20I%20neglected%20to%20check%20the%20can%20of%20chipotle%20peppers%20for%20wheat.%20Just%20as%20I%20was%20ready%20to%20add%20the%20can%20of%20peppers%20to%20the%20sauce%20I%20went%20whoa%20and%20checked%20the%20label.%20WHEAT%20DUH%20DUH%20DUH!!!%20Always%20check%20your%20labels.%3C/p%3E){kind=link}
