Receta Gluten Free Irish Soda Bread

Gluten Free Irish Soda Bread is far from traditional Irish Soda Bread which is made from only 4 ingredients. . . flour, baking soda, salt and buttermilk. There are no eggs, raisins, seeds or sugar in the traditional recipe; these were considered a luxury items which were added to the bread during harvest season to give the workers a treat.
A few years ago, I published my mother’s tried and true recipe which you can read about here.
Her recipe is the luxury version. . it has sugar, raisins, seeds, eggs and sour cream (or yogurt). My gluten free recipe is a spin on my mother’s recipe, I used almond and rice flours which give the bread a light and moist texture, both versions are delicious and don’t last very long!
Gluten Free Irish Soda Bread
INGREDIENTS
- 2 cups almond meal/flour
- 1/2 cup brown rice flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 cup organic coconut sugar
- 1 1/2 cup raisins
- 2 teaspoons caraway seeds
- 1 cup buttermilk
- 1 cup Greek yogurt
- 2 eggsINSTRUCTIONS
- Preheat oven to 350
- Grease one 9 inch round skillet or cake pan
- Combine flour, sugar, baking powder, baking soda, salt,raisins, and caraway seeds in a large bowl
- In separate a separate bowl,beat the eggs lightly, add the buttermilk and yogurt
- Combine with the flour mixture using a spoon
- When all is mixed,turn dough into a round pan
Bake for one hour
