Gluten Free Lemon Bars
Ingredients
1 cup cassava flour
1/2 cup butter or ghee, softened (not melted)
1 and 1/3 cup pure maple sugar
3 teaspoons grated lemon peel
3 tablespoons fresh lemon juice
1/2 teaspoon baking powder
1/4 teaspoon sea salt
2 large eggs
Directions
Preheat oven to 350 degrees F.
Combine flour, butter, and 1/3 cup of maple sugar until it forms a sticky ball. Press flat into an ungreased 8×8 pan.
Bake for 20 minutes.
Beat remaining sugar, lemon peel, lemon juice, baking powder, salt, and eggs until fluffy. Pour over crust.
Bake for 25 minutes.
