Receta Gluten Free Oatmeal Cookies

Now before I even begin here, I will say that I know that everyone has their own varying opinions on the usage of oats in the gluten free diet. I will follow that by telling you that this is only my opinion and I do not need to be yelled at and told that I am doing anything wrong because everyone's opinion is equally valid and I am simply sharing a recipe that I personally enjoy.

Moving forward...I had a serious hankering for some oatmeal cookies the other day and while it has been a long long time since I have eaten a really great oatmeal cookie, I was inclined to go ahead and try my own recipe. Of course I did use gluten free ingredients and I did use the brand called Only Oats in my concoction and the end result was perfection!

I found this recipe for regular thick and chewy oatmeal raisin cookies and I made a couple of alterations to make it gluten free friendly and of course I added chocolate chips instead of raisins because...well who doesn't like chocolate chips in their cookies? Duh.

Thick and Chewy (gluten free) Oatmeal raisin cookies

Makes approximately 24 cookies

Preheat oven to 325F degrees. Line baking sheets with parchment paper.

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter mixture. Stir in the oats and chocolate chips.

Scoop cookie dough using either spoon or small ice cream scoop (my preference for achieving same sized cookies) and place about 2 inches apart. Do not flatten cookies unless you want to. Not necessary though.

As I mentioned, I had a serious hankering for some oatmeal cookies and while others may not feel the same I personally choose (on occasional only) eat gluten free oats. I have chosen to limit my intake of oats, even if gluten free but that is my personal decision. Your opinion may vary and your doctor may have suggested you do not eat oats, even if labelled as gluten free. To each their own is what I think.
