%20once%20baked.%20I%20do%20not%20blame%20the%20recipe%20though,%20it%20could%20be%20the%20baker!!%20%20:-D.%20I%20am%20fairly%20new%20at%20being%20gluten%20free%20and%20was%20not%20sure%20it%20could%20be%20any%20other%20way.%3C/p%3E%3Cp%3ESo%20what%20was%20on%20my%20wish%20list%20for%20the%20perfect%20gluten%20free%20pie%20crust?%20%20The%20crust%20has%20to%20hold%20together%20yet%20be%20tender%20at%20the%20same%20time.%20%20It%20should%20not%20taste%20like%20a%20cookie%20dough%20either%20although%20I%20think%20this%20would%20have%20its%20place%20in%20the%20world.%20%20I%20guess%20that%20it%20seems%20like%20I'm%20asking%20too%20much%20but%20that%20is%20what%20I%20was%20hoping%20for%20in%20trying%20out%20this%20old%20recipe%20in%20a%20gluten%20free%20style.%3C/p%3E%3Cp%3ESo%20I%20finally%20did%20it!!!%20I%20finally%20baked%20a%20crust%20that%20worked%20for%20us.%20%20This%20recipe%20was%20really%20good.%20%20Really%20really%20good.%20I%20was%20so%20excited!!!%20%20It%20held%20up%20under%20the%20wet%20pumpkin%20bottom%20and%20you%20were%20actually%20able%20to%20EAT%20the%20RIM!!!%20%20Two%20thumbs%20up!%3C/p%3E%3Cp%3EPut%20the%20flour,%20salt%20and%20sugar%20into%20food%20processor%20and%20pulse%20once%20or%20twice.%3C/p%3E%3Cp%3EAdd%20the%20butter%20and%20shortening%20and%20process%20until%20the%20mixture%20looks%20sandy%20or%20the%20size%20of%20pea%20gravel.%3C/p%3E%3Cp%3ESlowly,%20while%20pulsing,%20add%20the%20water%20until%20the%20dough%20all%20pulls%20together%20to%20form%20a%20ball%20inside%20your%20processor.%3C/p%3E%3Cp%3EDivide%20dough%20in%20half.%20%20Place%20dough%20on%20a%20surface%20lined%20with%20parchment%20paper%20or%20on%20a%20Silicone%20mat.%3C/p%3E%3Cp%3ELightly%20flour%20the%20top%20and%20roll%20out%20making%20tiny%20turns%20as%20you%20roll%20to%20form%20a%20circle.%3C/p%3E%3Cp%3EUse%20Mat/paper%20to%20transport%20crust%20to%20glass%20pie%20plate.%20Gently%20settle%20crust%20into%20the%20pie%20plate.%20%20I%20was%20able%20to%20simple%20turn%20my%20pie%20plate%20upside%20down%20over%20the%20crust%20and%20then%20turn%20the%20whole%20crust/pate%20over%20upright%20and%20peel%20off%20the%20paper/mat.%3C/p%3E%3Cp%3EPlace%20pie%20plate%20into%20freezer%20or%20refrigerator%20to%20chill.%3C/p%3E%3Cp%3E**%20I%20used%201%20cup%20Sorghum%20and%201%201/2%20cups%20of%20the%20Udi's%20Bread%20flour%20blend%20which%20is%202%20cups%20Tapioca,%201%20cup%20SF%20Brown%20Rice%20Flour%20and%201/2%20cup%20Potato%20Starch.%20%20Don't%20Forget%20the%201%20teaspoon%20Xanthan%20Gum!!!**%3C/p%3E){kind=link}
