%20and%20a%20take%20on%20this%20recipe:%3C/p%3E%3Cp%3EChristianna%20over%20at%20the%20Burwell%20General%20Store%20really%20threw%20me%20for%20a%20loop%20with%20this%20one.%20Every%20month%20for%20over%20a%20year%20now%20(in%20my%20case)%20she%E2%80%99s%20zipped%20along%20a%20vintage%20recipe%20to%20a%20group%20of%20bloggers%20that%20I%20adore.%20I%20try%20to%20stick%20relatively%20close%20to%20the%20original%20recipe,%20keeping%20it%20in%20line%20with%20the%20kind%20of%20dish%20(savory,%20sweet,%20breakfast%20etc.)%20and%20keeping%20the%20prominent%20flavors%20included%20somehow.%3C/p%3E%3Cp%3EBut%E2%80%A6%20pork,%20fruit%20and%20cake?!?!%3C/p%3E%3Cp%3EI%20stewed%20for%20a%20few%20days%20and,%20in%20Dusty%20fashion,%20left%20this%20to%20be%20done%20the%20day%20before%20posting%20with%20only%20a%20couple%20of%20hours%20in%20my%20kitchen.%20But%20I%20awoke%20that%20morning%20with%20a%20revelation:%3C/p%3E%3Cp%3EIt%20was%20time%20to%20call%20in%20a%20Compost%20Cookie.%3C/p%3E%3Cp%3EI%20trotted%20over%20to%20the%20corner%20store%20with%20Mitra%20and%20started%20grabbing%20gluten-free%20snacks%20and%E2%80%A6%20pork%20rinds.%3C/p%3E%3Cp%3EAt%20home%20I%20opened%20the%20bag%20and%20%E2%80%93%20tentatively%20%E2%80%93%20%20ate%20one.%3C/p%3E%3Cp%3EUm%E2%80%A6%20I%E2%80%99m%20not%20quite%20sure%20I%20get%20the%20allure.%20But%20they%20totally%20worked%20in%20the%20cookies,%20subtly%20adding%20some%20earthy%20saltiness%20and%20helping%20to%20balance%20a%20bit%20of%20sweet.%20I%20used%20dried%20dark%20cherries%20as%20my%20fruit%20and%20starting%20tossing%20other%20corner-store%20finds%20and%20pantry%20staples:%20chocolate%20chips,%20slivered%20almonds,%20coffee,%20oatmeal,%20potato%20chips,%20kettle%20corn,%20frozen%20leftover%20chocolate%20cake%20crumb%20(from%20Chocolate%20Chocolate%20Cookies).%3C/p%3E%3Cp%3EThey%20were%20polished%20off%20at%20the%20picnic.%20My%20family%20indulged,%20my%20gentleman%20friend%20ate%20three,%20and%20they%20really%20satiated%20sweet/salty%20cravings.%20They%E2%80%99re%20intense%20%E2%80%93%20I%20could%20only%20have%20a%20few%20bites.%20But%20once%20again%20I%E2%80%99ve%20found%20the%20basic%20Compost%20Cookie%20recipe%20to%20be%20a%20winner.%3C/p%3E%3Cp%3EAnd%20the%20best%20thing%20about%20Compost%20Cookies%20are%20they%E2%80%99re%20really%20a%20grab-and-go%20experience%20in%20your%20pantry.%20So%20take%20the%20gluten-free%20cookie%20base%20and%20weight%20proportions%20and%20go%20hog%20wild*!%3C/p%3E%3Cp%3E(*couldn%E2%80%99t%20help%20myself)%3C/p%3E%3Cp%3ECheck%20out%20the%20takes%20on%20the%20recipe%20from%20the%20group%20by%20clicking%20on%20the%20little%20froggy!%3C/p%3E%3Cp%3EGluten-Free%20Pork%20Rind%20Compost%20Cookies%3C/p%3E%3Cp%3EBuilt%20around%20the%20Compost%20Cookie%20by%20Christina%20Tosi%3C/p%3E%3Cp%3EMakes%20about%2020-24%20cookies%3C/p%3E%3Cp%3EI%20both%20weigh%20and%20measure%20my%20ingredients,%20based%20on%20which%20is%20necessary%20or%20more%20accurate.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20standing%20mixer%20with%20the%20paddle%20attachment,%20cream%20the%20butter,%20sugars%20and%20corn%20syrup%20for%202-3%20minutes.%20Scrape%20bowl.%3C/p%3E%3Cp%3EAdd%20egg%20and%20vanilla%20and%20beat%20on%20medium/high%20speed%20for%207-8%20minutes.%20This%20step%20is%20vital%20in%20getting%20the%20sugars%20and%20fat%20to%20combine%20ideally,%20and%20will%20help%20the%20cookies%20not%20over-spread.%3C/p%3E%3Cp%3EMeanwhile,%20weigh%20out%20flours,%20baking%20powder,%20baking%20soda%20and%20salt.%20Whisk%20together.%3C/p%3E%3Cp%3ETurn%20mixer%20on%20low%20and%20add%20flour%20mixture%20until%20just%20incorporated,%20under%20a%20minute.%3C/p%3E%3Cp%3EAdd%20all%20compost%20ingredients%20on%20low%20except%20for%20potato%20chips,%20and%20mix%20until%20just%20combined.%20Fold%20in%20potato%20chips,%20trying%20not%20to%20break%20them.%3C/p%3E%3Cp%3ERoll%20out%20onto%20parchment%20or%20Silpat%20lined%20sheets.%20Wrap%20tightly%20in%20plastic%20and%20refrigerate%20for%20at%20least%201%20hour%20(this,%20again,%20is%20vital%20to%20them%20not%20spreading%20too%20much).%3C/p%3E%3Cp%3EHeat%20oven%20to%20375%C2%B0.%20Bake%20each%20sheet%20individually%20for%2018%20minutes,%20or%20until%20the%20outsides%20are%20just%20starting%20to%20brown%20but%20the%20middles%20are%20soft.%20Cool%20on%20pan%20for%20a%20few%20minutes%20before%20removing%20to%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
