%20destination%20late,%20late,%20late%20at%20night--%20or%20was%20it%20morning?),%20waking%20up%20on%20an%20electric%20blanket%20this%20morning%20to%20the%20sound%20of%20the%20creek%20racing%20by%20our%20cabin%20window%20was%20sheer%20bliss.%20We%20were%20back%20at%20HF%20Bar.%3C/p%3E%3Cp%3EMy%20kids%20had%20their%20boots%20and%20hats%20on%20by%206am,%20and%20were%20reacquainting%20themselves%20with%20all%20of%20the%20memories%20of%20last%20summer.%20(And%20yes,%20the%20(infamous,%20chick%20magnet)%20leather%20vest%20was%20fetched%20from%20the%20dress-up%20trunk%20before%20we%20departed%20CT.)%3C/p%3E%3Cp%3EAfter%20a%20breakfast%20hearty%20enough%20for%20a%20cowboy,%20we%20headed%20off%20on%20what%20will%20be%20our%20horses%20for%20the%20week,%20and%20my%20heart%20swelled%20as%20my%206-year-old%20confidently%20maneuvered%20an%20animal%20several%20times%20his%20size,%20and%20my%20two%20boys%20chattered%20away%20confidently,%20even%20though%20they%20hadn't%20been%20up%20on%20horses%20since%20last%20summer%20on%20the%20ranch.%3C/p%3E%3Cp%3EWe%20took%20in%20vistas,%20so%20magnificent%20and%20calming.%3C/p%3E%3Cp%3EThen,%20of%20course,%20my%20kids%20got%20back%20to%20their%20normal%20brotherly%20antics.%20Some%20end%20better%20than%20others.%3C/p%3E%3Cp%3EThere%20is%20no%20wifi%20here,%20except%20in%20a%20little%20corner%20of%20the%20long%20covered%20porch.%20So,%20I%20don't%20think%20I'll%20be%20touching%20base%20again%20this%20week.%20Instead,%20I've%20got%20a%20pile%20of%20books%20I%20can't%20wait%20to%20delve%20into.*%3C/p%3E%3Cp%3Ea)%20you're%20long%20on%20zucchini;%3C/p%3E%3Cp%3Eb)%20you're%20looking%20for%20another%20veggie%20recipe%20your%20whole%20family%20will%20enjoy;%20or%3C/p%3E%3Cp%3Ec)%20you%20want%20to%20start%20cooking%20ahead%20before%20you%20hit%20the%20ground%20running%20with%20a%20new%20school%20year.%3C/p%3E%3Cp%3EHere's%20the%20recipe%20in%20pics,%20and%20a%20few%20notes.%20First,%20to%20shred%20large%20quantities%20of%20veggies,%20I%20use%20the%20shredder%20attachment%20on%20my%20Cuisinart,%20though%20you%20could%20always%20do%20it%20by%20hand%20if%20you'd%20like.%3C/p%3E%3Cp%3EPlacing%20the%20veggies%20in%20a%20colander%3C/p%3E%3Cp%3Eand%20pressing%20them%20with%20a%20few%20paper%20towels%20will%20help%20remove%20excess%20liquid.%3C/p%3E%3Cp%3EDon't%20be%20afraid%20to%20get%20your%20hands%20dirty...%3C/p%3E%3Cp%3Ethat's%20the%20best%20way%20to%20make%20sure%20the%20ingredients%20are%20well-combined.%20This%20time,%20I%20made%20the%20fritters%20using%20gluten-free%20flour%20(Bob's%20Red%20Mill%20brand)%20because%20I%20get%20a%20lot%20of%20questions%20about%20whether%20a%20recipe%20of%20mine%20will%20work%20if%20friends%20make%20it%20gluten-free.%20Totally%20worked.%20Delicious.%20Couldn't%20tell%20the%20difference.%3C/p%3E%3Cp%3EAs%20far%20as%20size%20goes,%20you%20can%20make%20the%20fritters%20any%20size.%20Big,%20small,%20up%20to%20you.%20Sometimes%20I%20make%20them%20appetizer%20size,%20but%20this%20time%20I%20made%20big%20ones--%20perfect%20to%20pass%20to%20the%20backseat%20as%20an%20afternoon%20snack.%3C/p%3E%3Cp%3EAnother%20quick%20note:%20I%20tried%20baking%20this%20batch%20two%20ways,%20on%20a%20rimmed%20baking%20sheet%20drizzled%20with%20olive%20oil%20(pictured%20above)%20and%20without%20oil%20on%20parchment%20paper.%20Both%20ways%20worked%20perfectly,%20but%20you%20don't%20get%20the%20crispy%20outer%20edge%20if%20you%20go%20the%20parchment%20route.%20For%20the%20ones%20I%20was%20planning%20to%20give%20to%20the%20kids,%20I%20went%20the%20parchment%20route--%20less%20mess.%20(As%20if%20that%20really%20matters,%20given%20the%20nasty%20state%20of%20my%20backseat...)%3C/p%3E%3Cp%3EI%20listed%20a%20bunch%20of%20toppings%20on%20the%20recipe%20over%20on%20our%20local%20market,%20Walter%20Stewart's%20website.%20On%20the%20ones%20pictured%20above,%20I%20simply%20mixed%20Greek%20yogurt%20with%20sriracha%20(in%20ratios%20to%20get%20to%20the%20flavor%20I%20wanted).%20Later%20in%20the%20week,%20I%20simply%20drizzled%20them%20with%20hot%20sauce.%20And%20one%20day%20I%20gave%20the%20kids%20ones%20(quickly%20heated%20about%2010%20minutes,%20straight%20from%20the%20freezer)%20for%20breakfast,%20topping%20with%20maple%20syrup.%20Any%20way%20you%20top%20these,%20they're%20a%20delicious%20recipes,%20and%20one%20of%20my%20favorite%20summer%20make-ahead%20ones.%20Hope%20you%20all%20like%20them%20as%20much%20as%20we%20do!%20If%20you%20have%20any%20questions%20about%20the%20ingredients%20or%20method,%20just%20leave%20me%20a%20comment%20below.%20I'll%20happily%20get%20back%20to%20you%20after%20our%20week%20at%20the%20ranch!%3C/p%3E%3Cp%3E*%20P.S.%20If%20you're%20looking%20for%20your%20next%20great%20read,%20here%20are%20some%20that%20I've%20recently%20enjoyed...%20and%20here's%20what%20I%20look%20forward%20to%20reading.%20August%20is%20always%20a%20big%20reading%20month%20for%20me,%20as%20I%20switch%20from%20chauffeur%20mode%20to%20vacation%20mode.%20And%20for%20those%20of%20you%20will%2010ish-year-olds,
