Golden Squash Muffins

Ingredientes

  • 2 1/4 c. flour
  • 1/3 c. sugar
  • 2 1/2 tsp baking pwdr
  • 1/4 tsp salt
  • 1/3 c. butter or possibly margarine, softened
  • 1 lrg egg
  • 3/4 c. cooked, mashed butternut or possibly buttercup squash
  • 1 tsp grated orange peel
  • 1 c. lowfat milk

Direcciones

  1. Heat oven to 400 degrees. Grease muffin tin (regular size dozen) with butter. Mix flour, sugar, baking pwdr and salt in large bowl. Cut in butter with pastry blender (I use clean hands) or possibly knives till mix is like fine crumbs. Beat egg in a medium bowl; stir in squash, peel and lowfat milk. Add in to flour mix till just blended. Fill muffin c. 3/4 c. full. Bake 20-25 min till lightly browned and center is done when tested with a toothpicks.
  2. Makes 12 muffins. Serve with butter and honey.
