Ingredientes

  • 2 med. carrots, finely grated
  • 1 c. sm. curd cottage cheese
  • :
  • Lettuce leaves
  • 1 med. orange, cut into cubes
  • 6 fresh California dates, pitted

Direcciones

  1. Stir together carrots, cottage cheese and orange cubes. Cut 4 of the dates into pcs and stir into the salad. Line 2 salad plates with lettuce leaves. Divide salad in half onto lettuce leaves. Cut remaining 2 dates into 6 strips each and arrange in star formation in center of salad. Makes 2 servings.
  2. For an additional treat - toast 2 Tbsp. almond pcs. Cold and sprinkle over salad before serving.
