- Stir together carrots, cottage cheese and orange cubes. Cut 4 of the dates into pcs and stir into the salad. Line 2 salad plates with lettuce leaves. Divide salad in half onto lettuce leaves. Cut remaining 2 dates into 6 strips each and arrange in star formation in center of salad. Makes 2 servings.
- For an additional treat - toast 2 Tbsp. almond pcs. Cold and sprinkle over salad before serving.
