- Preheat the oven to 350F. Lightly spray an 8x8" baking pan with cooking spray.
- In a large bowl, stir together the flours, sugar, ginger, cinnamon, baking pwdr, and baking soda.
- In a small bowl, combine the egg whites, buttermilk, applesauce, and molasses. Add in the buttermilk mix to the flour mix. Beat with an electric mixer till combined.
- Transfer the batter to the prepared pan. Bake for 30 to 35 min, or possibly till a toothpick inserted in the center comes out clean. cook on a rack for 10 min. Then remove from the pan, and serve hot.
