I’m craving something, I do not know what. Don’t you love when that happens? I’ve been trying to figure it out for days but can’t quite put my finger on it. In an effort to satisfy whatever it is I’m craving I’ve been eating lots of delicious food. Although I haven’t yet found what it is that I’m craving, I am certainly enjoying the dishes I’ve been creating. Summer is officially here. That means I want to spend less time by the stove and more time relaxing in the backyard. Summer brings out the simplicity in things. Sometimes I get overly inspired, especially after a session of Pinterest escapades. The downfall to overly inspired is forgetting the basic. This time of the year my desire for loaded salads is in full swing. What is more basic than a salad? Loaded salads are simple and easy. And that’s exactly how I enjoy my summers, simple and easy. With that said I wish you a summer filled with fun and lots of delicious food. Good for your Skin Salad

1 6oz package baby bella mushrooms, quartered 1 large zucchini, halved, cut into ½ inch pieces 2 small sweet potatoes, peeled and cut into ¼ circles 1 cup cooked quinoa 1 cup baby tomatoes, quartered 1 avocado, sliced butter lettuce, ripped into large pieces olive oil store bought tzatziki dressing salt to taste Instructions

Preheat oven to 400 degrees. In a small bowl drizzle sweet potato circles with olive oil (just enough to coat). Season with salt. Arrange on a baking sheet. Repeat with zucchini and mushrooms. Roast vegetables about 20 minutes until sweet potatoes are slightly golden. Allow to cool. Arrange the salad starting with butter lettuce. Top with quinoa, roasted vegetables, avocado and tomatoes. Drizzle with tzatziki sauce and enjoy. 3.2.2708
