.%20So%20rice%20was%20going%20to%20be%20the%20starch,%20but%20since%20I%20wasn't%20making%20a%20creole%20sauce%20I%20wanted%20to%20make%20sure%20I%20had%20a%20rice%20recipe%20that%20was%20rich%20and%20would%20not%20be%20dried%20out.%3C/p%3E%3Cp%3EA%20dessert%20I%20haven't%20fixed%20in%20a%20while%20is%20a%20rich%20chocolate%20souffle%20that%20used%20to%20be%20a%20staple%20on%20the%20menu%20at%20Commander's%20Palace%20in%20New%20Orleans.%20It%20is%20not%20complicated%20to%20make%20but%20be%20warned......it%20is%20heart-stoppingly%20rich.%3C/p%3E%3Cp%3EAs%20I%20mentioned%20in%20my%20earlier%20post%20about%20shrimp,%20when%20I%20peel%20the%20shrimp%20I%20save%20the%20peels%20and%20use%20them%20to%20make%20shrimp%20stock.%20The%20stock%20can%20be%20used%20for%20a%20variety%20of%20purposes%20but%20%20in%20this%20case,%20I%20use%20the%20stock%20to%20cook%20the%20rice:%3C/p%3E%3Cp%3EGreen%20Rice%3C/p%3E%3Cp%3ETake%20four%20cups%20of%20shrimp%20stock%20and%20bring%20to%20a%20boil.%20Add%20two%20cups%20of%20basmati%20rice%20and%20two%20bay%20leaves%20then%20reduce%20to%20a%20simmer,%20cover%20and%20cook%20for%20around%20twenty%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20rice%20is%20cooking,%20melt%20a%20stick%20of%20butter%20(yes%20a%20whole%20stick...this%20is%20nothin.....wait%20until%20you%20get%20to%20the%20dessert!)%20in%20the%20sauce%20pan.%20With%20the%20butter%20add:%3C/p%3E%3Cp%3E1%20bag%20of%20baby%20leaf%20spinach,%20roughly%20chopped,stems%20removed%20and%20washed.%3C/p%3E%3Cp%3ESimmer%20slowly%20until%20the%20spinach%20is%20cooked%20down.%20By%20this%20time%20the%20rice%20should%20be%20cooked.%3C/p%3E%3Cp%3EIn%20a%20casserole%20dish,%20combine%20the%20rice%20and%20sauteed%20vegetables,%20cover%20with%20tin%20foil%20and%20set%20aside.%3C/p%3E%3Cp%3ENow%20let's%20prepare%20the%20dessert%3C/p%3E%3Cp%3EMolten%20Chocolate%20Souffle%3C/p%3E%3Cp%3ESoften%201%201/2%20sticks%20of%20butter.%20Take%20two%20tablespoons%20and%20liberally%20grease%20six%20ramekins%20that%20hold%20six%20ounces.%3C/p%3E%3Cp%3ETake%20the%20remaining%20butter%20and%201%20pound%20of%20good%20quality%20semi-sweet%20chocolate,%20chopped;%20into%20to%20the%20top%20of%20a%20double%20boiler%20over%20simmering%20water%20to%20melt%20stirring%20periodically.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20crack%208%20eggs.%20Mix%20together%20the%20eggs%20and%201%201/2%20cup%20of%20sugar%20until%20smooth.%20Add%20the%20blended%20butter%20and%20chocolate%20mixer%20to%20the%20food%20processor%20and%20blend%20with%20the%20egg/sugar%20mixer%20for%20three%20minutes.%20Add%201%201/2%20cups%20of%20flour%20and%20blend%20for%20another%20three%20minutes.%20Pour%20the%20mixture%20into%20the%20six%20ramekins,%20place%20on%20a%20cookie%20sheet,%20cover%20with%20wax%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3EOK,%20let's%20get%20ready%20to%20cook%20the%20shrimp%20and%20eat.%3C/p%3E%3Cp%3EShrimp%20in%20Champagne%20Reduction%3C/p%3E%3Cp%3EIn%20a%20large%20saute%20pan,%20put%203%20tablespoons%20of%20olive%20olive%20oil.%20Add%204%20or%205%20thin%20slices%20of%20fresh%20ginger.%20Heat%20the%20olive%20oil%20over%20a%20low%20fire%20and%20and%20gently%20%22sweat%22%20the%20ginger%20for%205%20minutes%20or%20so%20to%20infuse%20the%20ginger%20into%20the%20olive%20oil.%20Add%20the%20shrimp%20and%20continue%20to%20saute%20over%20low%20heat%20until%20the%20shrimp%20%20are%20barely%20pink.%20Be%20careful%20not%20to%20have%20too%20hot%20a%20fire%20or%20cook%20the%20shrimp%20too%20long%20or%20they%20will%20be%20tough.%3C/p%3E%3Cp%3ERemove%20the%20shrimp%20and%20ginger%20from%20the%20oil,%20and%20add%20to%20the%20pan:%3C/p%3E%3Cp%3E1/2%20cup%20of%20chopped%20green%20onion%3C/p%3E%3Cp%3E1/2%20cup%20of%20chopped%20red%20bell%20pepper%3C/p%3E%3Cp%3E1%20tablespoon%20of%20mince%20shallots%3C/p%3E%3Cp%3E2%20tablespoons%20of%20chopped%20parsley%3C/p%3E%3Cp%3ESaute%20until%20the%20vegetables%20are%20cooked,%20about%203%20minutes.%20Add%20three%20cups%20of%20champagne.%20Increase%20the%20heat%20until%20the%20champagne%20is%20simmering%20briskly.%20Reduce%20the%20champagne%20to%20about%202%20cups.%20Turn%20of%20the%20burner%20and%20add%20the%20shrimp%20to%20the%20pan.%20Then%20add%20two%20tablespoons%20of%20cold%20butter%20and%20stir%20in%20to%20incorporate%20into%20the%20liquid%20to%20make%20a%20sauce.%3C/p%3E%3Cp%3ERemove%20the%20rice%20from%20the%20oven%20and%20put%20a%20serving%20of%20rice%20in%20the%20middle%20of%20the%20dinner%20plate%20and%20top%20with%20a%20serving%20of%20the%20shrimp%20and%20serve.%3C/p%3E%3Cp%3EWhile%20eating%20the%20shrimp,%20place%20the%20baking%20sheet%20with%20the%20souffles%20in%20the%20oven%20at%20350%20degrees.%20Let%20them%20cook%20while%20eating%20the%20main%20course.%20Check%20after%2030%20minutes.%20When%20the%20souffles%20are%20puffed%20and%20a%20toothpick%20can%20be%20inserted%20and%20removed%20cleanly,%20remove%20from%20the%20oven.%3C/p%3E%3Cp%3ECarefully%20invert%20a%20ramekin%20over%20a%20desert%20plate%20and%20remove%20the%20souffle%20from%20the%20ramekin%20onto%20the%20plate.%20Sprinkle%20with%20powdered%20sugar%20and%20serve.%20The%20outside%20will%20be%20nicely%20baked%20and%20the%20inside%20should%20be%20a%20gooey,%20%22molten%22%20chocolate.%3C/p%3E%3Cp%3EWhat%20am%20I%20pouring%20with%20this?%3C/p%3E%3Cp%3EWe%20started%20with%20a%20vintage%202003%20rose'%20champagne%20from%20Pommery.%20That%20was%20my%20offerring.%3C/p%3E%3Cp%3ENow%20Joe%20has%20an%20excellent%20cellar%20which%20includes%20a%20diverse%20selection%20of%20white%20wines.%20He%20selected%20three%20very%20different%20French%20whites:%20one%20from%20Alsace,%20one%20from%20the%20Northern%20Rhone%20Valley%20and%20one%20from%20Bordeaux.%3C/p%3E%3Cp%3EThe%20clear%20winner%20was%20the%20Laville%20Haut-Brion%20from%20Bordeaux.%20The%20Alsatian%20wine%20and%20the%20Condrieu%20from%20the%20Rhone%20were%20too%20sweet%20for%20the%20dish%20although%20excellent%20representatives%20of%20their%20Appelations.%3C/p%3E%3Cp%3ESince%20most%20of%20us%20don't%20have%20access%20to%20these%20kinds%20of%20wine,%20I%20would%20suggest,%20as%20always,%20anything%20that%20doesn't%20over-power%20the%20food.%20That%20immediately%20rules%20out%20California%20Chardonnay%20which,%20as%20those%20of%20you%20who%20know%20me,%20know%20I%20consider%20the%20worst%20wine%20bottled.%20Look%20for%20a%20sauvignon%20blanc%20from%20France%20or%20South%20America.%20From%20South%20America,%20%20look%20for%20the%20wines%20from%20the%20Mendoza%20region%20of%20Argentina.%20There%20is%20a%20Spanish%20white%20made%20from%20the%20Albarino%20grape%20which%20would%20also%20go%20nicely%20with%20the%20shrimp.%20The%20Spanish%20wines%20are%20reasonably%20priced%20and%20quite%20good.%3C/p%3E%3Cp%3EThe%20wines%20from%20Spain%20and%20Argentina%20aren't%20easy%20to%20fine%20but%20are%20worth%20looking%20for.%20If%20you%20are%20local,%20check%20with%20Bryan%20at%20the%20Gourmet%20Shop.%3C/p%3E){kind=link}
