Gouda-pesto Stuffed Chicken Breast

Ingredientes

  • 2 chicken breast (preferably with the bones)
  • 100 gm gouda-pesto cheese
  • 1 tbsp lemon pepper
  • 1 sliced carrots
  • 1 cinnamon stick
  • 2 green cardamoms
  • 5 cloves
  • 1 star anise
  • 1 tbsp sugar
  • 4 cups water
  • 1 tbsp salt or salt to taste
  • 1 tbsp yogurt or cream
  • 2 tbsp vegetable oil

Direcciones

  1. Put 4 to 5 cups of water in a pot with cardamom, cinnamon, star anise and cloves. Add sliced carrots and chicken breasts (MAKE A POUCH FOR STUFFING) to it.
  2. Add more water if the chicken is not immersed in liquid.
  3. Cover the pot with a lid.Put it on low heat to simmer for at least 20 min or until the chicken is tender.You should check the chicken intermittently and also let the vapor escape else the liquid will ooze out of the pan.
  4. Take the breast out. Keep it to cool.
  5. Let the remaining broth simmer at low heat unless the water is reduced to 1/2 cup.
  6. Take out cardamom,cinnamon and star anise and blend carrots with remaining broth and cloves to a sauce like mixture.
  7. Add yogurt to the sauce, mix well and set aside.
  8. Grate gouda pesto and mix with lemon pepper.
  9. Stuff chicken breast with the grated cheese.
  10. Secure the breast with pins or tie with a thread.
  11. Heat oil in a pan. On high flame pan fry the breast on all sides until it turns brown.
  12. Remove from heat. Cut the threads or remove the pins.
  13. Serve hot with carrot-yogurt sauce.
