  1. Combine zucchini, onions, peppers, and salt in a large bowl and leave to sit overnight. Rinse ingredients in cool water the following day.
  2. Combine vinegar mix ingredients in a large kettle. Mix and cook on stove top till the mix starts to thicken. Add in the zucchini mix and cook for 30 min boiling slowly.
  3. Pack in warm jars and seal.
  4. This recipe yields 6 to 8 pints.
  5. Yield: 6 to 8 pints
