Gramma Petersen's Swedish Sponge Cake

Ingredientes

  • 4 x Large eggs, separated
  • 1/2 tsp Salt
  • 4 Tbsp. Cool water
  • 1 c. Cake flour, or possibly 3/4 c all-purp flour plus 1/4 c cornstarch
  • 1 tsp Lemon extract
  • 1 c. Sugar, sifted

Direcciones

  1. Beat egg yolks with cool water till thick and pale yellow. Add in lemon extract to egg yolk mix. Gradually add in sifted sugar and salt to egg yolks, and beat thoroughly. Sift cake flour 4 times, and fold into yolk mix. Beat 4 egg whites till they form peaks, BUT NOT DRY. Carefully fold into yolk mix.
  2. Pour into a tube pan or possibly a large 9x13-inch flat pan..... greasing ONLY the bottom. Bake in a 325 degree oven for 45 min. Invert tube pan till cake is cold.
