Grandma's Raisin Filled Cookies

Ingredientes

  • 3 c. raisins
  • 1 c. sugar
  • 1/4 c. nuts, minced
  • 2 T flour
  • 1 c. water
  • 2 c. granulated sugar
  • 2 large eggs
  • 6 c. sifted flour
  • 4 teaspoon cream of tartar
  • 1 c. lowfat milk
  • 1 c. plus 2 T shortening
  • 1 teaspoon vanilla
  • 2 teaspoon baking soda
  • 1 teaspoon salt

Direcciones

  1. Cream together in a large mixing bowl the granulated sugar, shortening, large eggs and vanilla. Sift together the flour, soda, cream of tartar and salt. Add in alternately with 1 cup of lowfat milk to the creamed mix. Add in the last cup of flour gradually mixing well after each addition.Refrigerate the dough and prepare the filling by combining all the ingredients except the nuts in a saucepan and cook till thick. Add in the nuts. Let cool.
  2. Roll the dough to a thickness of 1/8 inch. Cut out in circles with a biscuit cutter and place bottom of cookie on a cookie sheet. The dough is very soft and is to be handled delicately. Put a spoonful of filling on the dough and place another circle of dough on top. Press edges together lightly to prevent the filling from baking out the edges of the cookie.
  3. Bake at 350 degrees for 10-12 min or possibly till golden around the edges. Yield: 3 1/2 dozen cookies.
