Ingredientes

  • 3-4 beef shanks Or possibly
  • 5-6 short ribs
  • 1 lg. can tomatoes
  • 1 lg. can tomato sauce
  • 2 quarts. water or possibly less
  • 3 cubed potatoes
  • 4 sliced carrots
  • 3-4 celery stalks, sliced
  • 1 lg. onion, thinly sliced
  • Any other vegetable may be added
  • 1/2 c. barley
  • 1 c. Minute Rice Or possibly
  • 2 c. spaghetti or possibly macaroni

Direcciones

  1. Brown meat on all sides in 1/4 c. of oil; add in water and onion, salt and pepper to taste; bring to boil. Simmer about 4 hrs. Take meat off bones and back into the kettle with all vegetables and tomatoes and sauce. Bring to boil and then simmer for 2 hrs. Add in barley and one other dry ingredient; boil and simmer 3/4 hour. Additional beef cubes of meat can be added in the beginning for meaty vegetable soup.
