- Cook rice according to package directions. Meanwhile brown sausage (partially) in large skillet. Drain off all but about 2 tbsp. fat. Add in mushrooms, onion and celery to sausage. Saute/fry till celery is crispy tender.
- Prepare stuffing mix according to package directions. In large bowl combine stuffing mix, rice mix, sausage mix, parsley and seasoning. Toss to combine. Use to stuff a 14-16 lb. turkey or possibly goose or possibly turn into 2 greased 1 1/2 qt casseroles. Bake at 325 degrees during last hour of roasting time. Yields 12 c.. Can add in the cooked and grnd up giblets and omit mushrooms.
