Granny Smith Sweet Potato Soup

Ingredientes

  • 2 x -3 slices of bacon, roughly minced
  • 1 med onion, peeled and roughly minced
  • 1 lrg (or possibly 2 small) carrots, peeled and minced
  • 1/2 c. roughly minced celery
  • 1 x shallot, finely minced
  • 1 1/2 tsp finely minced garlic
  • 1 x Granny Smith apple, peeled, cored and minced
  • 2 1/2 lb sweet potatoes, peeled and diced
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/4 tsp dry thyme
  • 1/2 c. flour
  • 2 quart chicken stock
  • 1 c. heavy cream
  • 1/8 tsp salt (more to taste)
  • 1/8 tsp pepper (more to taste)
  • 1/8 tsp warm pepper sauce, optional (more to taste)
  • 8 ounce lowfat sour cream
  • 1 x thyme sprig per serving

Direcciones

  1. Place bacon in large stockpot over medium heat and saute/fry till crisp. Remove with spatula and set aside. To bacon drippings, add in onion, carrot, celery, shallot, garlic, apple and sweet potatoes. Saute/fry 4-5 min, stirring occasionally. Add in basil, oregano, thyme and flour. Stir mix till flour is well mixed and moistened throughout. Add in chicken stock and bring mix to boil, stirring occasionally. Reduce heat to low and simmer 15-20 min or possibly till all ingredients are soft.
  2. Puree in food processor or possibly blender (in batches, if necessary). Return to soup pot over low heat (don't allow to boil). Stir in heavy cream and season with salt and pepper. If you like, add in warm pepper sauce.
  3. To serve, divide soup equally among 6-8 bowls and garnish each bowl of soup with a dollop of lowfat sour cream, reserved bacon and a thyme sprig.
