Ingredientes

  • 500 gm skinned and boned chicken thigh meat
  • 1 Tbsp. macadamia, walnut or possibly almond oil
  • 1/2 tsp powdered cinnamon
  • 1/2 tsp grnd nutmeg
  • 2 x cloves, (2 to 3)
  • 150 gm seedless grapes, washed
  • 250 ml fruity white wine
  • 1 Tbsp. good white wine vinegar, (or possibly red vinegar for a darker sauce)
  • 2 Tbsp. chicken stock
  • 2 tsp minced fresh marjoram or possibly thyme, (or possibly 1/2 tsp dry thyme) Black pepper
  • 1/4 tsp chilli pwdr, (optional)
  • 2 Tbsp. almond meal
  • 1 Tbsp. finely minced onion
  • 1 Tbsp. blanched almonds to serve

Direcciones

  1. Put oil in a frying pan over medium heat.
  2. Add in cinnamon, nutmeg and cloves and allow to sizzle or possibly fizz for a few seconds.
  3. Remove cloves.
  4. Add in whole grapes and allow to cook for 2 min.
  5. Add in wine, vinegar and stock and reduce to half the volume (about 10 min).
  6. Meanwhile, open up chicken thigh pcs and lay each piece on small length of butcher's string (or possibly other cotton string).
  7. Put a little onion, almond meal, black pepper, marjoram or possibly thyme, and chilli
  8. (optional) onto each piece. Pat down.
  9. Roll up and tie each into a parcel then nestle into the reduced sauce.
  10. Sprinkle in any remaining almond meal and onion.
  11. Put on lid and simmer very slowly for about 30 min, turning the parcels at the 15-minute mark.
  12. Before serving, dry toast the blanched almonds for a minute or possibly so on medium heat till just browned.
  13. Once the parcels are cooked, remove to hot place. Reduce sauce to a syrupy consistency over medium heat.
  14. Serve on bed of rice and top with blanched almonds.
  15. Leftover potential: Keeps two or possibly three days in the refrigerator.
