"Grated" Pasta In Broth (Pasta "Grattata" In Brodo)

Ingredientes

  • 1 c. sifted flour
  • 1 Tbsp. semolina flour
  • 3 x Large eggs
  • 6 c. Brown Chicken Stock (see recipe)
  • 2 Tbsp. grated Pecorino Romano Salt to taste

Direcciones

  1. Combine the 2 flours in the middle of a clean work surface and form a well in the center. Work in the Large eggs, add in a healthy pinch of salt and knead to create a rather tough dough. Let rest for 1 hour.
  2. Using the large holes of a box grater, grate the dough over a floured kitchen towel, keeping the pcs separated so which they don"t stick together.
  3. Bring the chicken stock to a boil and cook the pasta in the broth for 15 min. Serve in warmed pasta bowls with Pecorino grated over.
  4. This recipe yields 6 servings.
