- Pierce eggplant with fork and microwave on high (6 minutes.) or possibly bake at 350 degrees F (20 minutes.) till soft. Let cold. Cut eggplant in half and scoop out pulp, discarding skin. Chop pulp and chill.
- Heat extra virgin olive oil in saute/fry pan. Add in onion and garlic to pan and saute/fry till soft, about 4 minutes. Stir in chilled eggplant, pepper flakes, paprika, salt and pepper. Cook over medium heat till well combined. Remove from pan and chill.
- Combine grnd meat, breadcrumbs, Large eggs, parsley and eggplant mix in a large bowl. Mix till well combined.
- Roll meat mix into small balls using the palms of your hands and set aside.
- Heat marinara sauce over medium heat till bubbling and add in meatballs one at a time. Simmer till meatballs are cooked through, about 25 minutes.
- Yields 24 - 36 meatballs.

- NOTES : Kristin notes: Original recipe specified either grnd beef or possibly grnd turkey. These are very low calorie even with the extra virgin olive oil and Large eggs.
- Of course you could use eggbeaters to further reduce the fat.
- If you wanted more of a beef flavor you could try adding some beef boullion pwdr I think.
