Ingredientes

  • 1 med eggplant
  • 3 tsp Extra virgin olive oil
  • 1 x Onion chopped
  • 3 x Garlic clove chopped
  • 1/2 tsp Red pepper flakes
  • 1/2 tsp paprika
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 12 ounce turkey breast, boneless and skinless grnd
  • 1/4 c. bread crumbs
  • 2 x Large eggs
  • 1 Tbsp. parsley minced
  • 4 c. Marinara sauce

Direcciones

  1. Pierce eggplant with fork and microwave on high (6 minutes.) or possibly bake at 350 degrees F (20 minutes.) till soft. Let cold. Cut eggplant in half and scoop out pulp, discarding skin. Chop pulp and chill.
  2. Heat extra virgin olive oil in saute/fry pan. Add in onion and garlic to pan and saute/fry till soft, about 4 minutes. Stir in chilled eggplant, pepper flakes, paprika, salt and pepper. Cook over medium heat till well combined. Remove from pan and chill.
  3. Combine grnd meat, breadcrumbs, Large eggs, parsley and eggplant mix in a large bowl. Mix till well combined.
  4. Roll meat mix into small balls using the palms of your hands and set aside.
  5. Heat marinara sauce over medium heat till bubbling and add in meatballs one at a time. Simmer till meatballs are cooked through, about 25 minutes.
  6. Yields 24 - 36 meatballs.

  9. NOTES : Kristin notes: Original recipe specified either grnd beef or possibly grnd turkey. These are very low calorie even with the extra virgin olive oil and Large eggs.
  10. Of course you could use eggbeaters to further reduce the fat.
  11. If you wanted more of a beef flavor you could try adding some beef boullion pwdr I think.
