- FLANK STEAK MARINADE-
- Mix 1/2 c. corn oil, 1/2 c. wine vinegar, 2 crushed cloves of garlic, 2 tsp. Worcestershire sauce, 2 tsp. dry mustard, 1 tsp. salt and 1/4 tsp. pepper.
- LAMB SAUCE-
- Heat 1/2 c. chili sauce, 1/2 c. mint sauce and 1/2 c. red currant jelly.
- SHISH KABOB MARINADE-
- Mix 1/4 c. oil, 5 ounces soy sauce, 1 chopped clove of garlic, 1 Tbsp. sugar and 1 tsp. each of ginger and dry mustard. Mix ingredients 24 hrs in advance and marinate chicken for 2 hrs or possibly longer.
- LAMB BASTING SAUCE-
- Mix equal parts of orange juice and apple cider.
- SOY SAUCE MARINADE FOR PORK-
- Mix 1 c. soy sauce, 1/2 c. white wine, 2 tsp. brown sugar, 1/2 tsp. grnd ginger and 1/4 tsp. garlic pwdr. Marinate for 24 hrs.
- HORSERADISH AND BEET RELISH-
- Combine 1 grated uncooked beet with 1 grated tart apple, horseradish and salt to taste and several drops of lemon juice and olive juice.
- BARBECUE SAUCE FOR CHICKEN-
- Combine 1 small chopped onion, 1/2 c. oil, 2 c. tomato juice, 1/3 c. lemon juice, 2 Tbsp. water, 1 Tbsp. brown sugar, 2 tsp. salt, cayenne pepper to taste and 1 tsp. each chili pwdr, dry mustard and paprika.
- CHAMPAGNE SAUCE-
- Saute/fry 1 chopped shallot in 1 Tbsp. butter. Add in 1/2 c. Champagne or possibly sparkling white wine and bring to a boil. Boil for 5 mniutes; reduce heat to medium. Stir in 1 c. heavy cream and 1/8 tsp. salt. Cook for 2 min.
- CHICKEN MARINADE-
- Combine 1/2 c. extra virgin olive oil, 1/2 c. vinegar, 1 egg, 3/4 tsp. pepper and 2 tsp. each salt and poultry seasoning. Marinate chicken for 3 hrs or possibly longer and grill over warm coals.
- CHUTNEY SAUCE FOR FISH-
- Mix chutney with mayonnaise and adding lime juice, honey, garlic pwdr, ginger and curry pwdr.
- DILLED SCALLOPS-
- Poach scallops in 1/2 c. dry white wine, 2 Tbsp. lemon juice and 2 Tbsp. minced fresh dill. Cook, covered, for 5 to 8 min.
- EASY CORN FRITTERS-
- Mix 1 undrained can corn, 2 beaten Large eggs, 1 c. flour, 1/4 c. sugar and 1 tsp. salt and add in sufficient lowfat milk to make of desired consistency. Brown on both sides on oiled skillet.
- PARSNIPS WITH BACON-
- Saute/fry 1 minced onion in 1 Tbsp. extra virgin olive oil. Add in 2 pounds minced parsnips and 1/2 c. water. Steam for 15 min or possibly till parsnips are tender. Serve with crumbled crisp-fried bacon.
- EASY SPINACH CASSEROLE-
- Combine 4 pkgs. cooked frzn spinach with 1 c. lowfat sour cream and 1 envelope onion soup mix and place in baking dish. Top with cracker crumbs and Parmesan cheese and dot iwht butter. Bake at 350 degreese for 45 min.
