Great Grandma Schaefer's Mac n' Cheese
The minute I saw the name of this recipe,
I knew I was going to make it.
Why?
My Grandma's name was also
Grandma Schaefer!
(Even spelled the same.)
My Grandma Schaefer was my maternal grandmother.
I spent every summer with my Grandma.
I loved every second I spent with her.
She not only taught me the importance of family but
she also taught me how to cook.
My love for cooking began while spending
those wonderful summers at
my Grandma Schaefer's house.

Great Grandma Schaefer's Mac n' Cheese
Prep time: 10 minutes
Cook time: 45 minutes
Serves 6-8
Ingredients:
- 8 oz elbow macaroni pasta
- (I used Bucatini pasta)
- 3/4 lb sharp cheddar cheese, shredded
- 2 T butter
- 2 T flour
- 2 cups whole milk
- salt and pepper
- Crumb topping:
- 1/2 cup panko bread crumbs
- (I used Italian bread crumbs)
- 1 T butter, melted
- Mix the melted butter and
- the panko bread crumbs until
- crumbs are moistened.
Instructions:
Preheat oven to 375º F
Lightly spray a 13 x 9 inch baking dish
with non-stick cooking spray
Cook elbow macaroni according
to package directions
Drain and set aside
While pasta is cooking
melt butter in a medium saucepan on low heat
Add flour, stirring constantly for about 3 minutes
Do not let the flour brown
Add milk and seasonings
Continue stirring until thickened
Remove from heat
Add 1/2 of the shredded cheese and
stir until incorporated,
melted and smooth
Mix melted cheese mixture with the elbow pasta
Add half of the pasta to the prepared cooking pan
Add remaining shredded cheese keeping just a bit for the top
Cover with remaining pasta mixture
Top with bread crumbs and cheese
Bake for 45 minutes until the cheese is bubbling
and the crumb mixture is beginning to brown
