Greek Couscous Salad

Ingredientes

  • 1 c. quick cooking couscous
  • 2 c. water
  • 1 tbsp. butter
  • 1 lg. tomato, seeded and minced
  • 3 ounce. feta cheese, crumbled (or possibly other soft cheese)
  • 1/2 c. chopped watercress
  • 5 tbsp. chopped green onion
  • 6 tbsp. extra virgin olive oil
  • 3 tbsp. fresh lemon juice
  • Salt and pepper to taste
  • Green olives
  • Toasted pine nuts

Direcciones

  1. Bring water and butter to a boil. Stir in couscous. Cover and remove from heat. Let sit for 5 min, then fluff with a fork. Cold. When cold, stir in the tomato, feta cheese, watercress and green onion. Toss with the extra virgin olive oil, lemon juice, salt and pepper. Garnish with green olives and toasted pine nuts. Serves 6.
